I told you yesterday that the crustless cauliflower quiche was on the delicate side and needed more zing. So I cooked up two pieces of bacon with it š
But it still needed something:
At lunch I decided to do one of the “extreme” rides and picked one that was 10.5 miles – when I looked down at the hill climb on the screen it didn’t look too bad, but what I didn’t realize is because its such a long ride, a 1/2 mile hill climb doesn’t look like much on the screen! It was tough – the pacer bike beat me by 8 minutes – but it was a good workout.
Have you been on healthy yum lately? I kind of forgot about that site, but yesterday saw a post from a girl who made a meatless reuben – she just used more sauerkraut – a girl after my own heart!
I had a turkey reuben for lunch – 2 ounce rye bread, 2 ounce smoked turkey, 1 ounce swiss cheese, 1/2 cup sauerkraut and 1/2 sliced green apple. I loved this combination. The salt from the cheese paired well with the sauerkraut. I used I Can’t Believe It’s Not Butter Spray and Pam to fry it up.
My store had cut up chicken for $1.79, so whenever I see that I think “buttermilk fried chicken.” I marinated the cut up chicken in buttermilk, salt, pepper and cayenne pepper overnight. Then it was just tossed in seasoned flour (I eyeballed it) and then fried in our deep fryer. Because our fryer holds the temperature so well, it didn’t taste greasy at all.
If you live in the NW suburbs of Chicago, you could have come over for dinner last night – I made 10 pieces of fried chicken for 3 people!

And since I still had the fryer out, I may have made some munchkins with some of the leftover donut dough!
Stats for Wednesday:
- 1504 calories, 113 carbs, 89 protein, 79 fat and 12.2 fiber
- 46% of calories from fat (really – I need to work on this! š )
- 45 minute 10.5 mile bike ride
- 5 minute cool down
BSI UPDATE:
There appears to be two concurrent BSI contests going on at the same time. I apologize for any confusion this has caused. This weeks hostess according to me is the Southern Cookbook who chose butter. However, Chilli & Chocolate is also hosting this week with pistachio. My solution is to let Southern Cookbook finish this week – and then we will extend Chilli & Chocolate’s pistachio as the hostess for next week. Does that sound like a fair solution?
Apple with your turkey rueben? Interesting. I’m not a big saurkraut person, but I can see the apple working with the turkey & cheese for sure š

I LOVE taco bell sauce, I even buy the little bottle from the store, but it never tastes the same as from the packets!!! My fiance yells at me when I put it on my eggs… he just doesn’t understand hahaha š

I’m drooling on my keyboard again…and laughing at that Taco Bell hot sauce! (In college, one of my good friends did a year abroad in France, and we sent her a care package that included 101 packets of Taco Bell hot sauce!)
It’s just as well that we do not have a fryer at home. I think my Mr. would put everything in there.
I’ll pass on the chicken, but give me some of those munchkins š

This sounds like a fair solution to me. I asked Chili and Chocolate via email to be the next host for next week. I am glad it is finally settled. I had fun, and ,meeting all kinds of nice people! Now, let’s get to the fried chicken! Oh my goodness! Fried chicken is a must in the south. I only make it once every few months ( because it is a fried food and I try not to fry to often. ) Great Post!

That buttermilk fried chicken looks good! I go back and forth on wanting to buy a deep fryer. I want to make my own fries! I make them oven baked now and it’s fine but not the same.
I love green apples in sandwiches! The crunch just does it for me for whatever reason.
Everything looks scrumptious! I actually tried a fried twinkie for the first time last weekend and it was pretty darn good. Everything tastes better when it’s fried lol Looks great!
Funny–your solution to the BSI problem was the same one I had in mind and I emailed you and Cheryl about it before I read your blog. hehe! Your fried chicken looks EXCELLENT but what looks even better is your Reuben! I’ve never heard of putting apple on a reuben but I bet it’s sooo good!

That’s exactly how Mr. Helen made those chicken tenders I mentioned in my Tuesday Ten this week because I had leftover buttermilk from my quiche making. So freaking good. And I ate too many.
