Tony and I were watching another food show over the weekend – I know, shocking!  😀  It was a throw down with Bobby Flay and it was huevos rancheros.  Tony decided to make me breakfast yesterday morning and boy was it delicious!

He pam fried the tortilla to make it crispy, removed it, then scrambled two eggs and about an ounce and a half of cheese with my Chipotle Tabasco sauce.  Then he warmed up some of my baja fresh salsa and poured it all over the top.  Holy shit – I could eat this every morning!  The corn tortilla still stayed crispy and he still makes the best scrambled eggs.  Thanks sweets!

We had to pick up a few more things at the grocery store I didn’t pick up on Saturday.  It was lunchtime so we stopped at Buffalo Wild Wings to watch our Sox suck ass.

Grilled chicken sandwich with bacon - 440 calories, 39 cars, 19 fat, 24 protein, 9 fiber

Guess what I found at the store Marisa??  The motherload of Laughing Cow Cheeses!  I’ve been envious of reading all the food bloggers who have had all the different flavors.  I had a coupon, so I bought the blue cheese and queso chipotle for $1 off two – still the cheapest price around town at only $2.79 a package.  At Jewel or Dominick’s its $3.99!

On the way home, Tony and I mapped out my bike ride.  When we got home I checked my blood sugar and it was 155.  I ate one glucose tab and hit the road.  About half way through, I stopped and ate 1/2 a package of a cinnamon granola bar and had half a bottle of water.

It was a gorgeous day!

My only downfall was to have “the hill” be at the tail end of my ride – but I made it up without stopping – my mantra was “don’t stop, don’t stop . . . ”  It worked!
All told my bike ride was 9.4 miles and I did it in exactly one hour!  The wind was a factor at times, and some of the hills were hard.  An hour after I got home I checked my blood sugar and it was 108 – perfect!

So with all my zucchini bounty, I picked three large ones and pureed them in my food processor.  I really had no idea what I was going to do, so I found inspiration from this woman’s recipe, but used what I had on hand.

Cream of Zucchini Curry Coconut Soup

Makes 6 servings (189 calories, 16.5 fat, 9.5 carbs, 3.4 fiber and 4.7 protein)

Ingredients

3 large zucchini
2 tablespoons basil, fresh chopped
1 1/2 cups chicken broth
1 teaspoon curry powder
1 teaspoon hot sauce
14 ounce light coconut milk
1 pinch of salt
1 pinch of pepper

Directions

  1. Puree zucchini in food processor with basil and 1/2 cup of chicken broth.
  2. Add remaining ingredients and simmer for 30 minutes.
  3. Serve with red chile paste on top for an extra kick.

This really could not have been easier to make and I love the combination of the coconut with the curry powder – kinda sweet with heat!  However both Tony and Hannah wouldn’t even look at it, let alone taste it – but that’s okay – more for me! 😀

Dinner was quick and easy — grilled pork chops with rosemary potatoes and sauteed apples.  Mom, I used the Paula Dean’s butt massage seasoning you gave me and I absolutely loved it!
