Tony and I were watching another food show over the weekend – I know, shocking! 😀 It was a throw down with Bobby Flay and it was huevos rancheros. Tony decided to make me breakfast yesterday morning and boy was it delicious!
He pam fried the tortilla to make it crispy, removed it, then scrambled two eggs and about an ounce and a half of cheese with my Chipotle Tabasco sauce. Then he warmed up some of my baja fresh salsa and poured it all over the top. Holy shit – I could eat this every morning! The corn tortilla still stayed crispy and he still makes the best scrambled eggs. Thanks sweets!
We had to pick up a few more things at the grocery store I didn’t pick up on Saturday. It was lunchtime so we stopped at Buffalo Wild Wings to watch our Sox suck ass.
Guess what I found at the store Marisa?? The motherload of Laughing Cow Cheeses! I’ve been envious of reading all the food bloggers who have had all the different flavors. I had a coupon, so I bought the blue cheese and queso chipotle for $1 off two – still the cheapest price around town at only $2.79 a package. At Jewel or Dominick’s its $3.99!
On the way home, Tony and I mapped out my bike ride. When we got home I checked my blood sugar and it was 155. I ate one glucose tab and hit the road. About half way through, I stopped and ate 1/2 a package of a cinnamon granola bar and had half a bottle of water.
My only downfall was to have “the hill” be at the tail end of my ride – but I made it up without stopping – my mantra was “don’t stop, don’t stop . . . ” It worked!
All told my bike ride was 9.4 miles and I did it in exactly one hour! The wind was a factor at times, and some of the hills were hard. An hour after I got home I checked my blood sugar and it was 108 – perfect!
So with all my zucchini bounty, I picked three large ones and pureed them in my food processor. I really had no idea what I was going to do, so I found inspiration from this woman’s recipe, but used what I had on hand.
Cream of Zucchini Curry Coconut Soup
Makes 6 servings (189 calories, 16.5 fat, 9.5 carbs, 3.4 fiber and 4.7 protein)
Ingredients
3 | large zucchini |
2 | tablespoons basil, fresh chopped |
1 1/2 | cups chicken broth |
1 | teaspoon curry powder |
1 | teaspoon hot sauce |
14 | ounce light coconut milk |
1 | pinch of salt |
1 | pinch of pepper |
Directions
- Puree zucchini in food processor with basil and 1/2 cup of chicken broth.
- Add remaining ingredients and simmer for 30 minutes.
- Serve with red chile paste on top for an extra kick.
This really could not have been easier to make and I love the combination of the coconut with the curry powder – kinda sweet with heat! However both Tony and Hannah wouldn’t even look at it, let alone taste it – but that’s okay – more for me! 😀
Dinner was quick and easy — grilled pork chops with rosemary potatoes and sauteed apples. Mom, I used the Paula Dean’s butt massage seasoning you gave me and I absolutely loved it!
Stats for Sunday
- 1648 calories (includes almonds eaten while watching t.v. last night)
- 119 carbs, 97 protein, 89 fat and 14.3 fiber
- 48% of calories from fat 🙁

Alright, time to get ready for work and get my gym bag together. Hope everyone has a great Monday!
You’re kicking butt with the bike riding! And the soup is right up my alley! Love it.
Nice bike ride!! And that breakfast looks AMAZING!!
“I had no idea what I was going to do” LOL I start a lot of recipes that way!
good job on the bike ride!
That does look like a yummy breakfast!
Great job on the bike ride!! And what a sweet man to make you such a yummy breakfast. I love the looks of your dinner potatoes and the creamy soup sounds right up my alley! Hope you have a wonderful week
Who knew Laughing Cow came in so many flavors!? You’ll have to let me know what you thought of the Bleu Cheese one…I bet it adds quite a zing in a sandwich! 🙂

everything always looks so delicious on your blog. i’m coming over!
You’ll have to pick me up some of those laughing cow new flavors, let me know how you like them!
Great job on the bike ride, it was an AWESOME day out yesterday. And I am totally going to Caputo’s this weekend and see what boxes of veggies I can get!
I wish I had all those Laughing Cow flavors. I did not even know they existed. In Portugal and in all of Europe I think, there is LC cheese, but I think it is a little different. I buy it at the commissary anyway so it is the US stuff.
How sweet of Tony. That breakfast looks so good too. I need to try pam-frying my tortillas. I love, love, LOVE huevos rancheros.
I love the new sun-dried mozzarella and basil laughing cow. I bought the chipotle too but haven’t tried it yet. I haven’t even seen the blue! YUM!
Your bike ride looks so pretty. I want to buy a bike now that my foot is all sorts of messed up.
I haven’t tried the new LC flavours yet – I still have a couple of rounds from Costco I want to use up before buying more 🙂
Great on the bike ride and the soup sounds and looks gooood!
I still haven’t seen the new Laughing Cow flavors around here either!
Those huevos look so good… would come in right handy towards the end of the week for a “breakfast for dinner” meal!
Great job on the bike ride girl! You should be really proud of yourself.
Oh and what grocery store were you at? I haven’t found the new flavors of that laughing cow cheese at my “cheaper”places yet. And I refuse to pay over $3 for it! I can get it for $2.79-$2.99 at some places.
It’s called Joseph’s and its in Crystal Lake, far NW suburbs from where you are! 🙁
You always look like you have the most delicious food! And can I borrow your husband one morning so he can make me breakfast??
Great job on the bike ride. I did 9 miles on my bike once and it took more over an hour (I forget how long, maybe 1.25 hours or something). I never ride my bike though, so I guess it wasn’t too bad! lol
Nice bike ride!!! Congratulations – you are such an athlete!!!
I love your LC selection – still haven’t found the bleu cheese flavor here. Let me know how you like it, ok?
Yayyyy you rode your bike. I am currently jealous- I was going to try to go for my first ride post-sprain today, but no dice – it’s raining out & I don’t want to push it!
My is new & fancy – check it out!
I think your grocery store should talk to my grocery store! I must seek out that chipolte flavor ASAP!
Great photos from the bike ride! Looks beautiful! Love exercising in nature… 🙂
Have a great week!
LOL–for a second I thought the store you found the cheese at was called Marisa and I thought that was such an interesting name! LOL! Now I get it–Marisa from Loser for Life. haha. I have cheese envy a lot but usually you give it to me with your chipotle cheddar!!! We do not have many Cabot cheeses here–I think only one kind, in fact. Like white cheddar or something. Phooey. Great job on the long bike ride!!
congrats on the bike ride! And all of that zucchini from your sunday post….i’m jealous!
Paula Deen’s butt massage seasoning…lol, that had me re-reading that sentence! Am so jealous of your Laughing Cow cheese selection. I just bought some yesterday on sale but we only have 3 or 4 flavors here!
