Since I knew I was going to be having pizza and cake later yesterday afternoon, my breakfast was simple – two Nature’s Path granola bars – am I the only one that loves crunchy granola bars?
It was the perfect amount of fuel to do Level 1 of Jillian’s 30 day shred. I am happy to report that I was able to do the push ups on my toes!
While everyone else had a couple beers, our hostess made sure that my water glass was filled at all times, and made sure I had hot sauce for my pizza! This one was really good – I think Chevy’s is a chain – there is one in Schaumburg.
My sister brought her green salsa (that had onions in it, but luckily it was pureed!) and I brought my baja fresh salsa.
My sister and I had sausage and pepperoni on our side – I had three squares.
Then after chatting the afternoon away, it was time for cake!
Portillo’s Copycat Cake Recipe
- 1 box Super Moist Betty Crocker cake mix (any flavor)
- 1 cup water (if using chocolate cake mix, add 1 cup cold coffee)
- 1 cup mayonnaise
- 3 eggs
Mix with an electric mixer for 3 minutes. Bake according to package instructions. For a 9×13, this cooked in 30 minutes. It is makes the most moist cake I’ve ever had at home!
Then it was time to say goodbye – thanks for a great afternoon ladies!
So on my way home, there was a Caputo’s grocery store. I had nothing in mind for dinner, so just thought I would see what jumped out at me. Did I score on tomatoes and zucchini! You know I’ve talked about the $1 rack at my local grocery store – um, they have discount boxes! I got one box (approx. 10 pounds) of tomatoes for $1.80, another for .99 cents and a box of zucchini for $1.50!
Turns out my box of zucchini had 17 zucchini and 5 eggplant! Tony and I hate eggplant, so those went immediately into the garbage.
I ended up using three zucchini for a cream of zucchini soup with curry and coconut milk (recipe will come tomorrow!) and then I got 20 cups of shredded zucchini. I divided them into 2 cup ziplocs, then put them in a freezer bag.
Then Tony and I got to work on one of the boxes of tomatoes. These are really ripe! I took off the stickers and chucked the ones that were too far gone, while Tony chopped them up and added them to the stock pot. We used about 1/3 of a bunch of fresh basil, two heads of garlic, olive oil and thyme and oregano.
So I head to the meat department, thinking I can get something to grill, when I see they had whole beef tenderloins for $4.99 a pound! John, you have to back me up that this is a great price!
So once I took it out of the package I was like “now what?!” Tony suggest I look online on how to butcher it – so I watched a chef on YouTube – perfect!
Just seeing the above picture kind of made Hannah throw up in her mouth! When it was all butchered, I had five 8 oz. filets and 1 1/4 pounds of meat to grind up for burgers later this week.
Good meat needs no other seasoning than salt and pepper. I cooked these on the gas grill, probably about 4-5 minutes a side total – it was perfectly medium rare!
Tony and I both took a bite and agreed that these were the best steaks we’ve ever had at home – they rivaled any restaurant! 😀

What kinds of things can you do with shredded zuchini? I am not very creative when it comes to meal plans!
I’ll probably use most of it for zucchini bread and for zucchini fritters – think potato pancakes, but using zucchini instead of potatoes! 😀
I looooove eggplant – my farmstand has started to sell little baby tiny mini Italian ones – I made ratatouille the other night with them!

I am pretty shocked right now. I do not understand why you would throw out perfectly good food when so many people go hungry every day. Please give produce next time to somebody – a neighbour, friend or even the soup kitchen, so it can be eaten. Thanks.
The whole box I bought was .99 cents – and if not eaten that day, would have spoiled by the next day. Had it lasted until Monday I would have brought it to work to share.

I did Shred level one yesterday too! Boy am I sore this morning though…good news I am back down to a good fighting weight in the 150’s again..ahem..158 this morning yeah!!!
My question to you is: I am once again within 10 pounds of being at what the charts say is ideal for my age 46 and height 5’6, however in only 3lbs I will be at a good bmi. I haven’t been at the ideal of 148 in 17 years and I couldn’t maintain it then so I don’t know if I should try to go that low now. Any thoughts?
You should be so proud of yourself Susan! If it were me, I would give myself a 5 pound range to stay within with maintenance – maybe between 150 and 155? Do what you feel comfortable with 😀
My mom’s birthday was the 13th and my sister’s birthday is today. I love your fun t-shirt! I’m not much of a beef eater, every once in a while I will buy it because my husband enjoys it. The corn and green beans look fantastic!

I have a completely random question for you. I wanted to ask you this because I thought you would know best. Today I got a question from a client (with diabetes) and he asked me if there was a difference in the benefit between cardio and resistance training. In other words, does one help with blood sugar (lower it, and make u less resistant) than the other? Or maybe it would be different for you since you are on insulin?
I really don’t know Gina. All I know is that if I am doing cardio, I make sure my blood sugar is on the higher side so I can get through a workout without bottoming out. If I know I am doing a strength dvd, if I start out at 130 blood sugar before the workout, I usually end up about 90 when I am done. With cardio, I make sure my blood sugar is at a minimum of 160 to 170 before working out, and then usually it drops 80 to 100 points during a workout.
Not sure that helped, but I know how exercise personally effects my blood sugar depending on the workout. Must be working because my 30 day average is 119! 😀
Yes you are. The only one who likes crunch granola bars! OK, well, that’s not true but I like ’em chewy. OK, so I thought “Twinfest” was the thing where the twins from all over America got together for a festival–LOL! Is that just what you call your birthday party? Or was it your pals’ birthday party? Happy birthday to whoever turned 42! And way to go on that produce. Man, that would make my day! Killer steal.
Yep – twin fest is just my twin sister and our best friends that are twins 😀 We get together about 3 to 4 times a year – it was our friends birthday last week we were celebrating! 😀

I don’t really know yet! I decided not to weigh in until the end of our 101 day of summer challenge, then not again until November. I think I am fueling my body right though, so we’ll see! 😀

OK, meat is neat. Take the Filets, and butterfly them next time. Cut lengthwise after you portion, without cutting completely through the filet. Same portion, and much easier to grill at the temp you want to eat it at. Even better for us fatties, butterflying makes two steaks for every one you picture. Of course, 1 big one is better for me, but not for my tush. Good stuff !!

It was our best friends birthday – who are now 42 – my twin sister and I turned 42 in March, but we always do cake at their birthday in August! 😀
