Wow, after what seems like weeks of thunderstorms, Chicagoland’s weather could not have been better yesterday! In the 70’s, blue skies, and perfect sleeping weather – I think it got down to 50 degrees last night 😀
For breakfast I scooped out half of a baked potato, leaving 3.5 of the shell. I scrambled 1 egg, 1.5 ounces of deli ham and red pepper and stuffed that in the potato, then put it under the broiler with .7 ounces of American cheese – delish!
And more strawberries – breakfast comes in at 335 calories, 39 carbs, 22 protein, 12.1 fat and 6 fiber.
I went to the gym and did the bike machine again – I warmed up with something called “the chaser.” Basically you ride the bike to grab tokens, then have to find the object on the token within a certain time to get points – it had me riding super fast, uphill, downhill – it was really fun! I did that for 10 minutes, then did a 6.9 steady hill climb – in the end I did 41 minutes on the bike for 8.1 total miles.
I was hangry when I got back to work – quick and simple, just heated up my vegetarian chili with chips and fresh jalapenos: lunch is 502 calories, 81 carbs, 25 protein, 11.2 fat and 16.6 fiber 😀
I need to thank my co-worker for bringing me these pickles – while I prefer dill pickles to sweet, these babies are jalapeno pickles from a farmers market! I need to make these – you start out with the sweet and slowly the heat creeps in. Have you made pickles before?
I’ve been trying to figure out how to use our fresh herbs, and decided to add some to my spaetzle batter – it turned out great!

I love my spaetzle maker – also found on Amazon.com for about $10 bucks.
I had grilled pork chops on the menu to go with the spaetzle – Tony picked up this marinade, and while I didn’t marinate the chops, I brushed it on at the last minute – gave the chops a nice tangy taste!
I tossed the grilled zucchini in a tablespoon of this dressing – I know it says onions on it (it’s actually Hannah’s!) but I liked it!
My plate: 521 calories, 52 carbs, 45 protein, 13.8 fat and 0 fiber
Then about 9:00, I could feel my blood sugar start to drop – must have overestimated the carbs in the spaetzle? So a weird event happened here on BDL – I had dessert! These shortcake shells are 60 calories each, with 2 giant sliced strawberries and whip cream. I woke up this morning and my blood sugar was a perfect 101! 😀
A big thank you to Leslie – I won one of her gorgeous handmade bags, and I hope she doesn’t mind that I am giving it to my daughter – she loves green – thanks Leslie!
And have you seen our friend Lynn’s movie yet from Actor’s Diet yet? It’s called White on Rice, available on demand. Tony and I watched it last night – it was so good! Parts of it had us laughing out loud. You have to check it out! 😀 Great job Lynn!
Stats for Monday:
- 1508 calories, 204 carbs, 94 protein, 38 fat, 24 fiber
- 8.1 total bike ride
- 5 minutes abs on the ball
I’ll leave you with something creepy – look what’s growing on our screened gazebo!

Have a great Tuesday! 😀 It’s another gorgeous day!
What is that growing on your screen?????
I love the “pouring” picture! it’s perfect!
What a creative and outside-the-box breakfast idea!! That looks really, really tasty!! 🙂 Glad to see the spaetzle again!! 🙂 Looks so great!!
My three year old and I can finish a jar of bread and butter pickles if given the opportunity. She also always steals the dill pickle spears off of my husband’s lunch when we go out.
Ewww!!!! Your last picture gave me chills and goosebumps!!!
I went to a couple of gyms in town looking for a fun bike machine like the one you talk about. NO LUCK! I am bummed!
All of those fresh herbs in the spaetzle….MMM! I bet it was so delicious. I still haven’t tried spaetzle and I really want to.
aw thanks so much for watching my movie! that means so much to me.
i’ve never made my own pickles before but i have added veggies to pickle brine. it works great!
dr pepper marinade?! sounds tangy!
anyways, i could be wrong but i believe those are ladybug eggs. still looks really creepy though
hey- I used Trader Joe’s Balsamic Vinaigrette dressing. I dont mix very much with it just a little then top my serving with a drizzle because it soaks it up as it sits in the fridge. I love that mix as a base for “pasta” salad. You can add in anything! 🙂 YUM!
OMgosh, that is so freaking me out. I wouldn’t be able to even look at it. If that stuff starts hatching, warn me before you post a photo b/c I’m gonna scream! I’ve seen the soda pop marinades & ice cream toppings and have solemnly vowed NEVER to use them. I don’t know why, but it majorly freaks me out to the maximum capacity. Well, maybe not the marinades as much as the scary ice cream toppings. I think that would make me gag to have Dr. Pepper or Crush syrup on top of my ice cream. Since you liked that dressing, maybe you would like onions that have been caramelized. It does change their flavor and there’s like NO acidity–they’re just sweet but still taste like onion. You should try them on like a burger or sandwich or something to see if it jives with you. I can’t imagine a life without onions. Oh, and those pickles sound fabulous! I would dig them. I’m a spicy girl myself, but probably not as much as you. 🙂
It’s not so much the flavor of onions – its a texture thing – raw ones are squeaky to me and the carmelized ones are like worms. I know, its Tony and I against a world of onion lovers! 😀
Definitely insect eggs! I googled that description to Google Images – lots of photos similar to yours. Who knows what they are – if I were you, I’d kill ’em now!
Thanks Momma! 😀
I just saw that Dr. Pepper marinade. I saw Dr. Pepper BBQ sauce too. Same with rootbeer flavoring. I thought about getting but I was scared! Glad to hear you liked it!
The poppyseed dressing sounds awesome! So what IS that growing there?
It’s so fun to see all of Leslie’s bags popping up throughout blogland – that one is so cute! Mine will make its debut on Fashion Friday. 🙂
Hmm the Dr. Pepper Marinade sounds interesting! I adore pickles, but only dill…sweet pickles are bleh to me lol
The weather is excellent here in Pittsburgh as well, and I’m loving it! And the weekend is supposed to be great weather as well! What are those things on your fence? Weird.
I make my own pickles and love them. I am a kosher pickle fan so I make them regularly and they take 4 days or so.
That breakfast potato looks really good.
i think it was Healthy Exposures that features ur veg chili.. but either way i think its one of ur timeless creations that looks so freaking yummy! <3
I love spaetzle! Mmm… now I want some. That wouldn’t be a bad breakfast, right? 😉
Man you come up with some great breakfast ideas Biz!
I don’t have on demand so I’m going to see if I can add your friend’s movie to my Netlifx cue.
Great job on your workouts – see how much fun it is when you’re doing what you like?!
I haven’t had a potato skin in SO LONG! That breakfast is brilliant! My mom made pickles years ago and we had so many jars that there were pickles everywhere!! Your spaetzle looks fantastic – I’ve always wanted to try making it.
Woohoo for Hannah coming home soon! I think, if she’s up to it and it’s okay with you, she should do a guest post. I’d love to hear all about her trip! Enjoy the gorgeous weather!!
I’ve never seen the Dr. Pepper marinade? That’s cool!
What are those things in your screen??? Ewwwwwww!!!!
Call you later!
Jenn
We actually bought it at Menard’s of all places! 😀
Everything looks GREAT! I’ve never made pickles before, but I’ve always wanted to try because I LOVE pickles! I’m not a huge sweet pickle fan either, but if I find the right ones, I’ll eat ’em!
I’m envious of the bike machine you use…it sounds like so much fun and such a way to stay motivated!
