Okay, I was really grasping at straws and only had enough to put together my breakfast! I can’t wait to go grocery shopping!!! I haven’t been in three weeks! Looks like I’ll be making a lot of pasta sauce and salsa! Check out the price of tomatoes!
For breakfast I had egg tostadas – 2 tostadas, 2 eggs, 1 ounce cheese and yes, pickled jalapeno and carrots on top – its okay to have spicy for breakfast!
With the last of the strawberries – breakfast comes in at 444 calories, 30 carbs, 26 protein, 15 fat and 5.7 fiber. I put the tostadas in the toaster to crisp them up – so crunchy!
All morning at work I was debating whether or not to work out or go to the Farmers Market. In the end, since I needed to pick up something for lunch, the market won! Sadly, even though I got there 1/2 hour after it opened, nothing was set up! When I remarked to the cashier about nothing being out yet, her response was “it usually takes us a couple hours to get everything out.” Um, okay, so start setting up at 10:00 a.m. instead of noon when you are supposed to be open!
I knew there was a Panera in this mall, but upon opening the door, the line was 20 people deep! So I walked down to:
The first time they opened one of these up near my office in Chicago, I ate there every day for a week! I was trying to see what my healthier options were, and settled on the skinny turkey with hot peppers and a cup of their tomato soup.
OMG, this soup was so good! I told Tony it made up for my shitty market experience!
So of course I check the nutrition after I ate – it kind of surprised me – I expected it to be around 400 calories – but it was 550 calories, 101 carbs (totally doesn’t seem right to me!), 32 protein, 4 fat and 10 fiber. There is no way lunch was 101 carbs, because my blood sugar would have been through the roof and it wasn’t.
I did buy three things at the market though – jalapenos, an heirloom tomato and baby cucumbers. The tomato and pepper were the inspiration for my party pizza Friday! I made Tony a BLT pizza, and I had a Mexican pizza. Sadly, when I do two pizzas in the oven, somehow Tony’s pizza doesn’t get a crisp crust so his pizza wasn’t as good – sorry Tony!
While that cooked I sliced and salt and peppered the tomato slices:
Then topped it with shredded lettuce:
The base of my pizza – the sauce is 1/4 cup refried beans mixed with 1/4 cup of my baja fresh salsa. Then I tossed 2 ounces of chicken breast from our herbed chicken last night with 1 tablespoon of taco bell taco sauce, then put corn and fresh sliced jalapenos – these were so fresh and spicy! 😀
Then I added shredded lettuce and Chipotle Tabasco on mine 😀 I need to remember to only cook one pizza at a time to get a good crust on both!
Stats for Friday:
- no exercise (which means I have to do level 1 and 3 of 30 day shred today! – I’ve always hated level 2 for some reason)
- 1,574 calories, 189 carbs (don’t think that is right), 84 protein, 57 fat and 22 fiber
On tap for today?
- laundry
- clean kitchen, back room and bathroom
- make my BSI vegetarian chili using bulgar wheat
- ??

k how true is this with a lot of farmers markets! i dont get it really.. is it cuz the farmers are travelling from far away.. no cuz its local right lol.. it doesnt make sense but it seems the same for me, everything takes ages to get set up! urgh
That sucks about the farmer’s market – I’d be pissed if I showed up 30 min after it opened and there was nothing set up. Opening time should mean you are ready to go – that’s how it works in a store.
Your Mexican inspired pizza looks tasty, especially with the beans & salsa as the base.
That stinks about your farmer’s market , sounds super sloppy. All the markets I have been to were set up long before people arrived. I even worked at a couple for a year and I was always there well before market opening, most vendors did their shopping then 😛
The pizzas look amazing, as usual.
Is that a reseller’s market??? Our farmers are up at the crack of dawn, and the set up is always ready by 7 AM… in fact, if you get there are 10 AM, the produce has a “picked over” feel to it.
But that pizza with the beans and salsa base sounds terrific.

That’s exactly what it must be!! I couldn’t put my finger on it because they would sell stuff like Driscoll’s brand blueberries that I can buy at our local grocery store.

That farmer’s market situation is so bizarre. When Johnny’s sister and I had the craft store we did booths at all types of fairs, bizarres, and sales/events. We had fold out tables and rolling suit cases. We got so good we could get items set up and priced w/ signs in 20-30 minutes and take down in the same time. And other booths were the same – even ppl selling breakables that had to be set up carefully one at a time.
What the heck do they do for 2 hrs??? I could set up that entire empty row you showed in 30 minutes!! Instead they have like.. a bin of jalepenos and some green beans. Maybe if you place them out laid out one by one and count? Sheesh – they must not need the money if they can just ignore business for a few hours!
My first Potbelly experience was not that great. I ordered a meatball sub and they put all the fixin’s on it – lettuce, tomato, etc. It was so disgusting to me – on a meatball sub!??? I don’t think I’ve ever looked at it the same since then, just makes me remember trying to eat that sub and pick the gross things off of it. Bad association I suppose.

The heirloom tomato looks so cool sliced! And I never thought about using refried beans as a “sauce” for a Mexican pizza, but it sounds great and that entire pizza looks to-die-for!

We don’t have any Potbelly’s out here on the west coast. Well, we do, but it’s certainly not a sandwich shop! Just the annoying kinds that hang over our pants! 😛

Nothing out of the ordinary for exercise this last week just three days of running along with doing the shred the 3x. All else is the same…I know I’m boring I admit it:)

Oh dear! Our farmers’ market is on Saturdays from 8 a.m. to 1 p.m. and they are usually pretty well set to go by 7:30 a.m.! There’s no excuse for such lack of concern for customers! That said, it looks like you snagged a delicious treat from Potbelly. I’ve never been to one but I’m going!
