I knew I was going out to dinner, so I thought I would stick to my sensible breakfast and lunch. Breakfast was three of my apple cinnamon pancakes, 1/2 cup of strawberries, 1/4 cup sugar free syrup, and not pictured was 2 slices of turkey bacon. Breakfast: 426 calories, 67 carbs, 16.9 protein, 10.6 fat and 5.2 fiber.
Lunch was a serving of my buffalo chicken chili served on a 5 ounce baked potato, 1/2 ounce 75% reduced fat Cabot cheese and fresh sliced jalapenos! 😀 Lunch: 479 calories, 89 carbs, 51 protein, 7.1 fat and 18.8 fiber! 😀
So we were meeting my step-son Joe and his girlfriend for dinner.
Tony and Hannah picked me up from work. In my customary fashion, I of course already decided what I was getting for dinner. The Sante Fe grilled chicken salad with low fat cilantro lime dressing.
However, when we got there, I was like “they have a beer sampler??!!” I love microbrews! Tony prefers his Miller Lite, but he helped me with these 😀
And then I made my fatal error. I looked at the menu again. I see the soup of the day is Cream of Tomato – my favorite!!
The Lucky Monk is known for their outstanding burgers and New York style pizza. The more I thought about getting the salad, the more I thought it would be like ordering a lasagna in an Irish pub! So I got this:
Oh.My.Gosh. First of all, the burger is perfect – so flavorful and juicy! The only thing that could have made this better was fresh jalapenos (which I asked if they had any, but they didn’t).
Both Joe and his girlfriend got the New York style pizza. I was shocked when I heard Joe order the spinach pizza! Um, turns out it was a bit too much spinach for him! But not for me. I ate one slice!
This is hands down one of the best restaurant pizzas I’ve had. It was described on the menu as Fresh, tossed spinach, ricotta, mozzarella, extra-virgin olive oil with shaved parmesan. First of all, the crust was perfect – slightly crunchy on the outside, but a bit chewy on the inside. The ricotta cheese base was to die for and the salt and peppered spinach with shaved parmesan – yum. I plan to recreate this for Friday’s Pizza Party Friday!
My guess is that one slice is: 225 calories, 28 carbs, 10.5 protein, 18.5 fat and 1.5 fiber. Oh, are you asking me if I had anything to drink with dinner?
Ready for the stats for dinner? 1,374 calories, 102 carbs, 54 protein, 59 fat and 3.7 fiber.
Was it worth it? Absolutely! I can’t remember the last time I had more than 2,000 calories, so I am just going to hit the gym harder the rest of the week.
And Joe’s new girlfriend? We liked her a lot! Very personable and she loves hot stuff! 😀 I see a hot sauce throw down in the future 😀 Meet Lizz!
After dinner Hannah, Lizz and Joe went to a hooka bar. Not sure I am even spelling that right! She had a good time with them! 😀

- 30 minutes on elliptical (my knee hurt yesterday, but today it is fine)
- 2,410 calories, 257 carbs, 122 protein, 76 fat and 38 fiber
- Blood sugar average: 143
Alright, time to scoot. I have to finish putting together my breakfast and lunch, and I need to marinate my steak for steak sandwiches tonight.

hey biz, I was wondering how your pancakes were after reheating them from the freezer. I’d like to make pancakes in bulk and freeze them, but I’d hate to be dissapointed with the taste after reheating
They are wonderful reheated! Either in the microwave, or just into your toaster 😀
