As soon as I walked into my office yesterday, someone had brought in two dozen of these:
Does everyone know what these are? They are heaven on a plate – it was paczki day yesterday! This one happened to be filled with boston cream – I brought this one home for Tony and Hannah to share. It wasn’t until someone linked in to my last year post – I forgot I had made baked paczki’s! I am going to have to try those again!
I stuck with my breakfast I brought – eggs in a bread bowl – which I’ve made before, but recently saw on Cathy’s site – and when whole wheat rolls were on the $1 rack, I knew I’d have it for breakfast. Once I scooped out most of the inside bread, my roll ended up being 3 ounces, with 1/2 cup scrambled egg whites with spinach and a tablespoon of bacon bits, topped with 2% pepper jack cheese. I cheated and cooked my eggs separately, then just stuffed and broiled it in my office toaster oven. YUM!
With another grapefruit sent by my MIL.
I am trying to use up stuff we have in the house before going grocery shopping again, so I remembered I had a spaghetti squash to cook up – and decided to make another version of my spaghetti squash spinach lasagna.
I only cooked three lasagna noodles for the layers – first sauce, then spaghetti squash, then spinach, ricotta cheese, and repeat – ending with the last layer of noodles.
Finish with 1.5 ounces of mozzarella cheese on the top – then bake for 30 minutes at 350.
This makes 4 servings – each serving is only 263 calories! 😀
My friend and I actually walked outside yesterday for 45 minutes – it got pretty windy at one point, but the fresh air was wonderful! About two hours after lunch though, I was STARVING! Like I hadn’t eaten anything! So I went to my cubpoard in the kitchen at work and came back with this:
An hour later I was STILL hungry!
I just entered my calories in this morning from yesterday – no wonder I was hungry!! Before dinner I’d only had about 750 calories!!
I decided to make chicken wings because we had them in the freezer – on the side I made a cauliflower au gratin, pretty much the only way I’ll eat cauliflower – I’ve tried to make the “mashed” cauliflower, but that tasted like ass – when your mind thinks mashed potatoes, it just isn’t going to taste good!
I used a recipe in this month’s Rachael Ray’s magazine:
I can’t do the straight mashed cauliflower either. Try adding some real potatoes to the “mashed” cauliflower. It tastes so much better if you use half cauliflower and half potatoes.
Again…your photos are just stunning! Actually I think your breakfast looks much better then the paczki!

Yep – that breakfast is so good – you’ll see I had it again yesterday and I’ll probably have it again today before the rolls go bad! 😀

Mmmmm paczki! That’s the polish side of me coming out! I saw on the news that they served over 140,000 of those alone in Milwaukee yesterday. That is crazy!

And that lasagna! Amazing. Genius idea to put spaghetti squash in the inner layers instead of lasagna noodles. I really need to use spaghetti squash more, especially when I want to have really decadent sauces.

Yay paczkis! Johnny realized late last night it was paczki day! At my old work my boss was Polish and his dad made HUNDREDS the Monday before w/ two of his buddies. Seriously – he’d bring in 5 gallon buckets of them. We’d eat them the whole week reheated w/ all diff. jelly fillings.
Your lasagna looks SO good! I just made my first one this week – awesome!! I’ve never made spaghetti squash though – I tried one time and totally failed!

Spaghetti squash lasagna?! I have to make some! I’ve been pretty boring with my spaghetti squash consumption, only having it with marinara sauce. I need to shake it up!
Isn’t it crazy how dense bread can be, even after we “scoop” it?! Gah.
let me get this straight for the lasagne – one layer of noodles and it’s on the very top, just under the mozzerella? Does the squash make it watery?
I assume you cook the squash ahead of time? Baked? Microwaved?
I’m ready to try spaghetti squash again, and I don’t want to be disappointed this time.
Sorry Beth – yes, the spaghetti squash is cooked ahead – I just poke a hole in it with a knife and microwave for 9 minutes. Let cook, then cut open, throw out the seeds and gunk, and use a fork to get the strands out. I then put the squash in paper towels, then chop it up so its easier to eat.
The last layers are sauce, then noodles, then the mozzarella cheese – but I don’t think it really matters what order – as long as the mozzarella is on top 😀
And it is not watery at all!
inspired by the lasagna and having both a spaghetti squash and some mushroom/bean ragout leftover (very italian, with all the appropriate seasonings) in my refrig, I decided to microwave the spaghetti squash per instructions above (hole, 9 minutes). About 8 minutes into the process, I heard a large explosion in the microwave and found, no surprise, spaghetti squash all over the inside. I have always oven roasted spaghetti squash prior to this and will, I think, resume my previous mode of cooking it from here on. Nonetheless, the ultimate result, spaghetti squash with the mushroom ragout served over, was really good. My husband does scullery around here, so he got to clean up the mess. Am I lucky or not???!!
But maybe I shouldnt have done the squash at full power?

And poor grandma. I must admit I kind of laughed at your description of “boom”. But cleaning the inside of the microwave is no fun.
When I cook acorn or buttercup squash in the microwave, I cut it in half, scoop out seeds, wrap in plastic wrap and microwave it. If you dare to try again, prepare it this way and check it at 5 minutes. Sounds like your microwave may be a tad more powerful.

I must be a weirdo, because I love cauliflower. Steamed with a little salt and pepper is my fav., followed by raw in salads. I did try making mashed potatoes with it and yeah, it wasn’t good.
I saw a bottle of Franks at the store the other day and thought of you. Is it hotter than Tabasco, or just different?
It’s actually milder to me – even Tony can handle it – and not as vinegary (sp?!) as my beloved Tabasco! 😀
I will have to try it then…if Tony can take it then I should be able to!

Did I miss something? Are you not buying any more Annie’s dressing? I’m not a big fan of cauliflower either. I keep trying (the last time I tried roasting it) but I’ve decided that I really love enough other veggies that if I never have it it’s ok.

That cauliflower gratin was pretty…too bad it asted like ass! Was it really that bad because it does look yummy?!
I just had to use a slotted spoon because it was that soupy – last time I made a basic white sauce, which I think worked better – it tasted good though! 😀
