Thanks to Run Beans Run for hosting the BSI recipe contest this week! I was glad she chose tofu because I already had some in the fridge! 😀 I had been tossing around an idea about making orange chicken but subbing in tofu. I didn’t have any honey, so I decided to use a tablespoon of my red pepper jelly – it worked!
Let’s face it – if you have a meat eating husband like I do, it’s really hard to pass of tofu or quinoa meatballs! That is why I made this dish for one person! 😀
Red Pepper Jelly Glazed Tofu for One!
Ingredients
1 | tablespoon pepper jelly |
10 | ounce tofu |
1/4 | cup orange juice |
1 | teaspoon cider vinegar |
1 | teaspoon soy sauce |
1/2 | teaspoon curry powder |
1/2 | teaspoon of Tabasco |
1/2 | teaspoon cornstarch |
1 1/2 | teaspoons water |
Directions
- Dice the tofu and stir fry over medium heat until browned on both sides.
- In another pot, add pepper jelly, orange juice, vinegar, soy sauce, curry powder and Tabasco and stir over medium high heat until thickened – about 8 minutes.
- Remove from heat. Dissolve the cornstarch in the water and add to mixture and stir well. Pour over tofu and mix until combined.
- Serve over white or brown rice.
Not to pat myself too hard on the back but this was AMAZING! Everyone knows I love spicy, but it has to be FLAVORFUL spicy, not just knock my socks off spicy. This one fit the bill – spicy, slightly sweet from the pepper jelly, and then the cut of the acid in the orange juice – I could have rounded out the meal by adding fresh broccoli, but it got freezer burned.
Without the rice, this comes in at: – it gets an A-!

I had tofu in my miso soup for the first time! (usually I eat around it…) but it was really good! I think I would like it prepared like this – more crunchy!

Hehe, we are opposites. I don’t like tofu but Bobby can’t get enough! I make tofu dishes for one for Bobby. And then I make something else for me.
The only tofu that I kind of liked was when I pan-fried it in a lot of olive oil and made fried rice with it. But it wasn’t remotely healthy =/ But fairly tasty!

Reading about your red pepper jelly made me think of an idea my wife had about smearing that on top of a roast just before it is done, or on top of some meat that is being grilled just before it is done. We haven’t done it yet, but it sure sounds good.
That would be a great glaze on a ham too! 😀

Yum that looks really good Biz! And I totally know what you mean about the choking yourself! Once I had orange chicken take out in a big bowl and my grandma called. I leaned over the bowl to get the phone, took a breath, and said hello — only I ended up gasping for about 15 seconds. Very weird feeling and I made J try it too. hahahaha
YES, this looks fantastic. I even have almost all of these ingredients in the house, except where the heck can I get pepper jelly. Now I don’t like too spicy since my mouth will be on fire, so I am thinking cut back on some tabasco, but overall this looks good and I am glad you did the recipe in single serve. I try to spare Ryan sometimes from too much tofu.
