Breakfast was a low carb egg white/ham/cheese wrap with a kiwi on the side – I forget how much I like kiwi’s and last week my store was selling them for 10 for $1!
My soup was inspired by Cory – check out this link, but his main blog is on my blog roll – Culinary Cory. I say “inspired” because soup is the one thing that I normally don’t follow a recipe letter to letter. I made this soup using what I had on hand – mostly cans!
Biz’s Mexican Soup
- 1 can low sodium chicken broth
- 1 cup water
- 1 tablespoon chicken soup stock
- 1 can tomato sauce
- 1 can spicy Rotel tomatoes with chiles
- 1 can hominy
- 1 can shoepeg (white) corn
- 1 can cream of celery soup
- 1 large cooked chicken breast shredded
Mix everything in the pot and simmer for 20 minutes. Upon tasting it, and you know I can handle the hot stuff, the extra spicy can of Rotel tomatoes with chili was too hot for me! I was so pissed that I just ruined a whole pot of soup. I turned around to my pantry see how I could fix it and found this:
I just dumped the whole can in and it worked! Still spicy, but not too spicy – and it made a nice thick soup!
Have you guys ever used hominy before? I just started adding it to soups recently and I love it – and I am not even sure what it is!
My friend and I did ten minutes of exercise while someone finished in the room with the DVD player – I did 10 minutes on the stair climber, then we did the 35 minute sculpting ball DVD. But later in the afternoon, I could feel my blood drop, checked it and it was 45. So I ate this x 2!
Dinner was ribeye steak (50% off and 1.2 pounds cost $4.23!), rice cooked in chicken broth and broccoli with a swiss cheese sauce.
Time to put my food together for the day and get my ass to work. Happy Friday and Happy Birthday Charlie! 😀

My guess is around 120 per cup – I will put it in MasterCook over the weekend and update it.
Hominy? I think I’ve heard of it…but I’ve never had it before! So it’s corn, huh? definitely trying this – if anything, it’s fun to say. 🙂 That soup looks amazing! Mexican soup = one of my faves.

I knew hominy was corn but didn’t know it looked like that – obv. I’ve never had it. So soup – what would you do with a couple of cartons of butternut squash soup to liven them up? I bought them a while ago but cannot bring myself to eat them – I think its a texture thing. What would you do?

It’s pureed…I don’t know, I just think it needs something.
Hominy is corn! It’s the only corn I really like other than corn on the cob. I mean I tolerate other corns but hominy is the bomb. When I was a kid I used to beg my mother to buy it and I would eat a whole can of it for a snack.

Just look away from the broccoli! I know you don’t like vegetables Jessica, but I didn’t either until I learned how to cook them right – the only vegetable I ate growing up was cucumber!
