One thing I never got around to over the weekend was the laundry.  The worst part of laundry for me?  Putting it Away.  And you want to know how crazy that is?  Tony built a closet in the basement for me – so I literally have to walk about 5 feet to put my clothes away!

I am the queen of stacking my clothes on a long table beside the dryer.  How I ever produced a Type A neat freak, I will never know!  Even the clothes I “attempted” to put away were in balls on top of each other.  My solution? I put on my iPod, put a huge sheet on the basement floor and then just tossed ALL the clothes in the middle and just started a folding clothes party – I stole borrowed Hannah’s iPod docking station to help with the boredom – but guess what? It only took me 30 minutes!  Here I’d been putting it off and it didn’t take any time at all – just five songs on my iPod!

While folding my clothes, I came across a skirt my sister had given me.  I love this skirt.  It’s a spring/summer skirt.  And I’ve never worn it.  When you have a “middle” skirts and dresses just don’t look right.  And that got me to thinking, I can’t remember when I wore a skirt – its probably been years!

So I’ve added that to my 2010 goals – some time this year I am going to wear that skirt!!

Breakfast was a Biz classic – light Thomas english muffin, 1/2 cup egg whites, baby spinach, 1 ounce deli ham, 1/2 ounce swiss cheese with an apple on the side.

In my Operation Deep Freezer Clean I had ground pork.  I thawed it to make pork wontons.

I used one wonton on the bottom, then one on top and pinched together

You Pam fry the wontons for 4 minutes, then steam for an additional 4 minutes.  I can’t post the recipe, because I never really tried it.  When I got to work to put my wonton soup together – the wonton tasted off.  You know how you buy meat sometimes, never get around to using it, and then just tossing it in the freezer?  Well, I think it had already started to turn before I put it in the freezer.  It looks pretty though!  I started with 6 wontons:

Then my soup consisted of:  3 cups chicken broth, 1/2 cup bean sprouts, 1 ounce cooked shrimp, baby spinach, 2 ounces of my Thai Basil Chicken mixture and sliced jalapenos for a spicy broth.

Only one slight problem – once I removed all the wontons, my soup was only 155 calories, 2 fat, 6 carbs, 30 protein and 1 fiber!  Luckily I ate a late lunch, but I was still snacky in the afternoon:

Speaking of Tabasco, Tony’s wonderful powers of observation, something I clearly don’t possess, noticed that I was almost out of Tabasco!  Crises averted though – whew!

I had planned on surf and turf for dinner, but we decided on just surf!  I had leftover crab legs from our last crab fest with our neighbors.  I measured out 2 tablespoons of butter for myself – about the same amount of calories as the crab!  I heated up two Green Giant broccoli for one for each of us – then added 1/2 ounce shredded cheddar for extra cheeziness:

204 calires and 23 grams of fat

Dinner comes in at 464 calories, 30 fat, 12 carbs, 39 protein, 2 fiber

I was up and down doing laundry, and I didn’t even take insulin with dinner because it was so low carb.  But I did make these and had a few bites, so I took some insulin then.

It was around 11:15, I was so ready for bed, but as I was folding the last load of laundry, I started to sweat.  And I was in a cold basement!  I got upstairs and my blood sugar was 50.  So I measured out a serving of this perfect snack food:

Munchies. Quite possibly the best idea in snack foods! 140 calories, 7 fat, 18 carbs, 2 protein, 1 fiber

So I waited 15 minutes, and my blood sugar was only up to 53!  Next up?  A brownie of course!  130 calories, 27 grams of carbs:

Fifteen minutes after that I was only up to 58!  So I finished with this:

93 calories, 1 fat, 24 carbs, 1 protein 2 fiber

Fifteen minutes after that I was at 82, so I felt comfortable going to bed – finally at midnight! I woke up this morning and it was 110 – so all is well!

Also, Tony and I were watching Diners, Drive-Ins and Dives last night, and they featured a pizza place in Buffalo, NY who makes a Reuben pizza!  Are you kidding me?  So I am going to try to recreate a lower fat version on pizza party Friday – Tony suggested I attempt to make a rye flour dough with caraway seeds GENIUS! here is my question – what kind of sauce would you put on that?
