I had so much computer problems last night – I couldn’t open Windows Live Writer and it made me mad so I just shut off the computer! Now I have to post the old fashioned way! 😀
Morning was 1 ounce of bagel, 1/4 cup egg beaters, 1/4 cup egg whites, 1 tablespoon bacon bits, and hashbrowns.
Breakfast: 379 calories, 13 fat, 42 carbs, 22 protein, 3 fiber.
Hannah had to work, so the boys were watching football. We were trying to think of football food that they hadn’t had, and when Tony called Joe he said he wanted my panini’s. I was kind of confused, because I don’t have a panini maker, but then realized he wanted my deluxe grilled cheese! The secret? Well, there are two. First is I use Panera’s sourdough bread. The second is that I do it in our cast iron skillet – you just have to have a medium-low heat so that the inside gets cooked before the outside gets over done.
As I was cleaning out the fridge before going to the store, I realized I had pizza dough. I looked around and decided to make pesto pizza! My pizza is 4 ounces of dough, 1/8 Trader Joe’s prepared pesto, and 1/2 ounce fresh grated Parmesan cheese – with crushed red pepper. This was really good!
Lunch: 381 calories, 22 fat, 35 carbs, 3 protein, 3 fiber.
For some reason, the longer I keep the dough in the refrigerator, the crispier the crust is – this one came out like a cracker!!
I was Bizzy in the kitchen as usual on Sundays. You’ll have to come back tonight for my Flax Seed Toasted Pecan Pancakes and Classic Beef Stew – the recipe I had for beef stew called for salt pork to be added while it baked the first 1 1/2 hours – I didn’t even know what that was!!
For dinner I made Cincinnati Chili – 3 ways. I used this pasta, but sadly Tony could tell that it was healthy pasta! 🙁
My plate: 4 ounces cooked pasta, 1 1/8 cups chili, 1/2 ounce of cheese, and not pictured because I forgot about it, was I added 1/4 cup of dark red kidney beans. I really liked the pasta – and it has 4 grams of fiber per serving!
Dinner: 555 calories, 26 fat, 50 carbs, 30 protein, 10 fiber.
I didn’t get all my laundry done, or get in any exercise. Unless you count me moving in our summer chairs into the basement, but that only took 10 minutes!
Stats for Sunday:
- 1,315 calories
- 61 fat
- 127 carbs
- 65 protein
- 16 fiber
- no exercise

The Chili looks so good. I have never done it over pasta but will have to try it someday soon.

Do you have a waffle iron/griddle? Mine has 2 trays and they flip to be waffle or flat for a griddle. I’ve used the flat griddle side to mush and cook a sandwich both sides like a panini!

OH man, I’m a HUGE fan of Skyline Chili! Actually my brother brought some home the other night and I was so bummed he didn’t bring me any.
I don’t subscribe to Clean Eating magazine, but it sounds like one I’d be interested in, for sure! Perhaps I should add it to the X-mas list???
So I have the same issue with hubby over the “healthy” pasta and someone told me about Ronzoni Smart Taste. Which is a white pasta with added fiber. He has NO clue. So now when I make something we’re both eating, that’s what I use. Otherwise I love the Healthy Harvest.
I just have to say I admire all your beautiful food photos. And I’m wondering how you come up with your nutritional calculations?

I use http://www.sparkpeople.com. It’s free. I weigh all my food and then go from there. So if I make a big pot of chili, I’ll put all the ingredients in there and then divide by how many cups it makes.
It’s a lot of measuring, but my blood sugars are normal so its worth the work! 😀

I was in a chili frame of mind this weekend, too! Yours looks great.
Ooooooh Panera has such good bread. I have just a few slices left of their multigrain…it toasts up so nicely.
The pizza looks & sounds fabulous. I never even think about pesto that way. I have got to pick some more up & just put it at eye level in the fridge to make me think outside the box.
