I have no ability to use salt. Seriously. I under salt just about everything I cook. Thank goodness for Tony! I constantly bring him things to taste, and the first words out of his mouth is “it needs more salt!” I think Tony thinks I’ve burned every tastebud in my mouth for all the hot stuff I eat! This mornings breakfast was no exception!
- 1 corn tortilla
- 1/2 cup egg whites
- handful baby spinach
- 1/2 ounce cheese ends
- fresh sliced jalapenos! 😀
- tablespoon lime salsa (Paul Newman’s –so good!)
- fruit salad with raspberries and kiwi
My store had kiwis for 10 for $1! You’ll be seeing these a lot this week!
Since I went to the Japanese grocery store yesterday, I picked up some bean sprouts and baby bok choy – I’ve had regular bok choy, but never really liked it – but I LOVED the baby bok choy! I had leftover crab from my mom’s birthday dinner, so lunch was crab stir fry:
- 1.5 ounce baby bok choy
- 3 ounces bean sprouts
- 1.5 ounce red pepper
- 1.5 ounce zucchini
- 1 package of Yaki-Soba Noodles (150 calories for the whole package!)
- 3 ounces cooked king crab
- 3 ounces broccoli
- 2 tablespoons House of Tsang Szechuan sauce
This was so filling and good! But I wished I would have added more sliced fresh jalapeno to this dish! 😀
I thought I would get a cup of coffee around 3:00 and decided a Cafe Mocha ala Biz was in order!
- 1/3 packet of sugar free cocoa mix
- coffee
- 2 tablespoons whipped cream
- sprinkle of Nestle ice cream topping (left over from an office birthday celebration)
Hit the spot!
I picked up some really cheap bone in chicken breasts over the weekend, so decided I would make buttermilk fried chicken. I seriously under salted the buttermilk marinade (but if it were for me I would have added WAY more cayenne 😀 ) and under salted the flour mixture – but the buttermilk made it extremely juicy and tender. Hannah hates how raw chicken looks! Luckily she had pizza after work! 😀
My plate: 5 ounce fried chicken breast, 1 cup “skinny” mashed potatoes (potatoes mixed with chicken broth, no butter) and green beans.

I am totally the opposite of you. I love salt and probably over salt my food. Oddly enough, I only ever crave sweet food, not salty – guess I take care of that craving in my normal eating.
Haha, I am the absolute opposite! I oversalt everything, which I love but my husband thinks I overdo it.
I actually have a memory – one of my earliest memories – being 5 years old, in the car with my mom on the way to see the Nutcracker play and complaining that my sippy cup of milk was salty. She laughed it off, and then I told her that it was salt because I had put salt in it!!!! lol!!!!
10 kiwis for a dollar?? I’m happy to see 4 for a $1 a round here. I would totally be hoarding kiwis and making kiwi everything at that price! 😉
Thanks for the tofu tips. I never thought about muffins. I can’t believe your store had kiwis 10 for $1. Those are my fave and I just had to throw some out since I went out of town and just found them in the back of the fridge, yuck!

Oh and as for the salt thing…. I hardly EVER add salt. If my hubby wants salt added he can do it himself on his plate.

Mmmm…mashed potatoes! A friend of mine tried making “faux tatoes” with cauliflower, didn’t like them, but did like a combo of half potato, half cauliflower. I’ve been meaning to try that sometime….

And yum for the chicken! We have a fryer, but have never even opened the box (wedding gift from J’s marriage 10 yrs ago). I’m not sure how to use it or what to do w/ the oil! Do you empty it and clean it ea. time and discard the oil, or is it ok to use for multiple uses??

The egg white tortilla looks fabulous. It may not be such a bad thing that you don’t use a lot of salt. I’ve been really paying more attention to my salt intake and it seriously lingers EVERYWHERE! Most people get double the amount they need. Yikes.
