I had a non-stop day at work yesterday and when I got home, all I wanted to do was make dinner and snuggle with Tony – and that’s exactly what I did! 

Breakfast yesterday started out with spicy oats: 1/2 cup oats, 2 pieces cooked bacon, 1 Pam fried egg and 1/2 ounce 75% reduced fat cheese and a good shot of Frank’s hot sauce.  (Thanks go to Allison for this creation!)

Then I lucked out that there was fresh fruit leftover from a work function – love when that happens!

I didn’t get a chance to walk yesterday, just too much going on.  My friend I walk with decided to pick up sushi and brought me some back – I had a California roll and a cucumber salad – the dressing was just a vinegar/soy/crushed red pepper flavor – I don’t think there were many calories in it!

The BSI is hosted this week by Coco and Balance, Joy and Delicias!  I decided to try out another cauliflower pizza crust!  This time I used a non-stick pan which helped immensely! 

Cauliflower Pizza Crust

  • 1 cup cooked cauliflower
  • 1 cup mozzarella cheese
  • 1/2 tsp. garlic salt
  • cracked pepper
  • 1/2 tsp. salt
  • 1/2 tablespoon Italian seasoniong
  • this whole crust: 418 calories, 28 fat, 15 carbs, 29 protein, 6 fiber

Throw everything into a food processer and just pulse until combined.

Once combined, just dump on your cookie sheet and press into the thickness you want.

Bake it at 450 for 15 minutes, without any toppings.  Then add toppings and turn your broiler on until the cheese melts.  Because the toppings aren’t in the oven long, you have to precook your toppings.  I sautéed mushrooms and sausage for Tony’s side – I had sausage and red pepper.

The outside got nice and crispy, but the middle was a bit soft – the taste was wonderful though!  I think next time I’ll add 1/2 cup of flour and see if that makes a better dough – but this one was really good!
