Life got in the way of me blogging yesterday! Before I knew it, it was 10 p.m, and I just didn’t have the energy to blog!
Earlier yesterday though, Hannah and I were out in her car running errands, when she tried to start the car and nothing. No sound, no clicks, just nothing. Of course, I know nothing about cars but that didn’t stop me from popping the hood to have a look around! The weird thing is that there was a guy who drove by us twice, looked at the hood up, but never stopped!
So we called Tony and he came to the rescue! Turns out it was only her battery, and within an hour and $75 later, she was good to go!
But let’s start out with breakfast, shall we? I haven’t had this cheese in my house in the longest time!
Only 60 calories an ounce – it is so flavorful, a little goes a long way – this is what 1/2 an ounce looks like shredded!
My breakfast was 1 egg, 2 ounces lean roast beef, the above cheese and hot sauce, on a 100 multigrain english muffin.
I didn’t get any sale papers from the grocery stores, so I decided to use what I had on hand for the rest of the day. Hannah and I did pick up a couple ingredients for our dinner, but other than that – everything was from my fridge or freezer. I had 1/3 of a beef roast and decided to make open face Italian beef sammies on Healthy Life bread. I started out heating up beef stock with Italian seasoning for the au jus.
I had one sammie with 1/2 a Fujii apple.
My friend had given me an acorn squash from her neighbors garden. I had no idea what I was going to do with it, until I saw a picture on tastespotting. (my grilled chicken picture made it on tastespotting yesteray too – so exciting!) I only had one acorn squash, so when we were out I picked up a second one. I have never had acorn squash! I cut it open, drizzled it with olive oil and salt and pepper, and baked it for about 45 minutes at 375.
I plan on making the soup later today and will post the recipe then. Can’t wait to taste it!!
Hannah and I had stir fry on our minds for dinner – not your typical Labor Day menu, but it was so good! I found these noodles at the Japanese grocery store:
You just heat them up in hot water and toss it in the stir-fry. And each 5.5 ounce serving is only 150 calories! I had shredded carrots, red cabbage, water chestnuts, sliced zucchini and broccoli. Shrimp and sauce were added at the end. Somehow I thought I could eat all of this myself!
It seemed like I ate, and ate, and ate, but I only managed to eat about 1/3 of this bowl – lots of leftovers! Tony isn’t a huge stir fry fan, so I ended up grilling up some chicken for him:

Stats for the Day:
- My meals only came to 1002 calories today!
- 20 minutes elliptical
- 20 minutes stairmaster
- 5 minute abs
Joe is coming over today, so I still have to figure out what to make for him. Off to get the Sunday paper to check the sale papers – see you tonight!
The stir fry. It looks great. Half of my house would prefer the chicken though. 🙂

Never had acorn squash before? That’s the only kind I ever had growing up as a kind – all those other kinds were foreign to me until I was older.
Once when my car broke down, my friend and I literally were sitting at a gas station with the hood up for AT LEAST four hours (waiting for my dad to come tow it home) and not one person stopped! Crazy.
Congrats on getting on tastespotting twice in a week! Those acorn squash look sooo good, I can’t wait until butternut squash arrives at my stores!

I have never cooked acorn squash – or much of the other squashes either, for that matter. I should branch out this winter, ya think?
Car troubles…yikes. I guessed the battery from your first sentence, but that’s about as much help as I would be…don’t even know how to use jumper cables! Glad y’all were on your way again fairly quickly!

Mmm I love acorn squash – it’s probably my favorite of the squashes. I usually buy 3 or 4 and have them in the pantry to grab for quick sides and to stuff dinner into! 🙂

We made your quick pizza dough last night.

It got a little too puffy. I’m thinking it was because hubby bought “quick rise” yeast.

Did you use it right away, or how long did it sit out?
I’m a HUGE acorn squash fan!! I like to cook it like you did, with butter, brown sugar, and just a bit of sugar. It’s one of my favorite fall and winter foods.

I am 100% useless when it comes to cars as well! Good thing my dad used to work for GM because I’d be screwed.
