your zucchini cakes kind of tasted like icky crab cakes that had a Mexican fiesta happening on the inside.” These were the words uttered from my daughter after she tasted my zucchini pancakes! Okay, maybe I do tend to carry leftovers a bit far. Remember last night when I didn’t know I was going to fix since Tony was out? I ended up making chicken nachos, with the black bean and corn salad left over from my SIL’s birthday party.
Oh my goodness these were good! I used my canned jalapeno peppers for the first time – I left the seeds in and my mouth was on fire by the end but I LOVED it! 😀
But before I get on to tonight’s dinner, it was back to basics with my breakfast! Egg sammie with apples! I used 3/4 ounce pepper jack cheese – so melty!
With a sliced Fuji apple on the side – my favorite apple! Breakfast comes in 361 calories, 7.8 fat, 26 protein, 46 carbs and 4 fiber.
I knew I had leftover chili and one baked potato in the oven, so that was easy to put together. I figured I would eat this whole thing until I found out how many calories were in this 10 ounce potato! So I ate 1 cup of chili and only half of this potato. Lunch comes in at 455 calories, 22 fat, 24 protein, 40 carbs and 6.2 fiber.
I had a side salad, and while my last red pepper was smoking hot, this was not spicy at all!
Okay, on to dinner! Tony picked up a marinated pork roast from Sam’s Club – we have never been disappointed! And while I thought the seasoning was a bit salty, Hannah ate two pieces of meat! This is unheard of in our house! Probably the most meat (other than hot dogs) she’s eaten in the past month! This was our flavor:
So I saw on Duo Dishes they made Zucchini Cakes with a Pesto Dipping Sauce. I decided to base my side dish on this, except using what I had on hand. Whenever I have people over on the weekend, I never do a complete menu or grocery shop, so its kind of nice to wing it once in a while!
My take on Zucchini Cakes
- 3 grated zucchini
- 2 cloves of garlic
- 1/2 cup leftover black bean/corn salad
- 1 tablespoon melted butter
- 2 eggs
- 1/2 teaspoon cayenne
- 1 tsp. salt
- 1 cup whole wheat bread crumbs
- 1 tablespoon olive oil/Pam for pan frying
Mix everything together until you can form a patty. I like the one bowl method!
I LOVED THESE! They were tender on the inside, a bit crunchy on the outside – and I made a dipping sauce with 5 tablespoons fat free sour cream to two tablespoons of my Mom’s homemade pesto (which was great by the way Mom!). My plate (I love the end pieces of roasts!):
Dinner comes in around 451 calories, 22 fat, 35 protein, 24 carbs and 2 fiber.
Hannah is happy to hear that it was the last of the black bean salad!!
I’ve been enjoying reading what everyone’s favorite recipe is on my giveaway – not too late to enter – two more days! I had to laugh at Tony’s response! He absolutely loves frozen Banquet Fried Chicken. It is so not good for you, but oh so good! He bakes it in the oven for over an hour – the outside is dark and extra crispy, yet the chicken is juicy. Although now we ponder how the frozen fried chicken would do in our deep fat fryer!

- 37 % of calories from fat – nertz!
- 45 minute walk at lunch! 😀
So I talked about starting the food pantry challenge. When I had to give them my starting weight, it was at night and I weighed in last Sunday at 167.6. Well today I weighed in at 166.2, which I only credit to my weighing in the morning! But I’ll take it. I am starting a food pantry bag, so 1.4 pounds of canned goods is put aside! Thanks ladies for putting this challenge together!

I have to agree with your daughter! They sound good for dinner, but not breakfast. But what you paired it with looks more like a dinner not a breakfast anyway. Sounds like something I would make! I love black beans, infact we do black bean tacos with turkey burger on a regular basis. We love them, and leftovers are even better!!

Hannah is so funny…I actually scanned the zucchini cake recipe for crab! They look great – do you just use a regular grater for the zucchini, or is that a microplane?
Actually, I used my microplane because I was too lazy to pull out my heavy food processor – but I loved the texture! 😀
