I had to use up my whole wheat bread I made over the weekend – with no preservatives, it goes pretty quick.  So I decided to make a breakfast bread pudding!

  • 2 cups egg whites
  • 2 large eggs
  • 2 ounces shredded cheddar cheese
  • 4 ounces diced whole wheat bread
  • 1 cup baby spinach
  • 1 ounce deli ham, chopped
  • salt and pepper

Mix everything together:

Let the bread soak for about 5 minutes while the oven heats up - bake at 375 for 45 minutes
