I had to use up my whole wheat bread I made over the weekend – with no preservatives, it goes pretty quick. So I decided to make a breakfast bread pudding!
- 2 cups egg whites
- 2 large eggs
- 2 ounces shredded cheddar cheese
- 4 ounces diced whole wheat bread
- 1 cup baby spinach
- 1 ounce deli ham, chopped
- salt and pepper
Mix everything together:

Morning break is over – I plan on doing a kick boxing dvd at lunch today with my co-worker – come on back for lunch – On Top of Old Smokey!
wow. quite a unique and delicious way to make a breakfast. gotta try that next week.

This looks delicious. Do you have a “classic” bread pudding recipe? Now I am craving it!
I’ve never had bread pudding but it always sounds like something I’d be all over – can’t beat bread!!
