This soup recipe could not have been easier, since there are so few ingredients:
- 8 ounces ground sirloin
- 1 tablespoon hot sauce (I used Thai hot sauce)
- 3 cups baby spinach
- 8 cups chicken broth (I use soup base which comes in a jar – only 10 calories per 1 cup of broth)
- crushed pepper to taste
- per one cup serving: 96 calories, 5 fat, 7 protein, 3.5 carb, 1.25 fiber
Mix together the hot sauce and meat and form into marble size.
Bring the chicken broth to a boil, then add the meatballs – you’ll know they are done when they float to the top, about 3 minutes.
I made garlic chips on the side – just sliced fresh garlic fried in 1 tsp. olive oil – I actually used Smart Balance oil because that’s what I have in my pantry at work.
I was so full from my egg sammie that this is all I had before my friend and I went on a 45 minute walk – it felt so good! I have a salad to eat this afternoon when I get hungry.
Gotta scoot – afternoon break is over – come back tonight for Grilled Chicken Cordon Bleu!

I LOVE that hot sauce! It is really good if you mix it with mustard to use as dipping for pot stickers or adding an extra kick to your sandwich!
