I love pepper jack cheese! Has to be one of my top three cheeses of all time. Here’s a kitchen tip: since we got a new coffee pot, my old coffee filters aren’t needed and I had about 400 left! So now I use them with my food scale – the side hold everything in and it makes it easier to shred the right amount of cheese –
This morning’s breakfast:
- 1 ounce Thomas’ light english muffin
- 1 fried egg in Pam
- 1 ounce pepper jack cheese!
I love doing my fried eggs in my cast iron skillet so it has nice and crispy edges. Breakfast comes in at 233 calories, 15 fat, 12 carbs, 16 protein and 4 fiber.
I can’t wait to pick up my CSA box at the farm today – although Tony thought it would be funny if I got a whole box of ONIONS! Come on back to see what I got – I may need your suggestions with recipes!

I’m so jealous you have a CSA – I have a local Farmers Market but I have to drive there and find city parking (pain in the A** x 1000) so I havent been yet this summer…. plus it feels very environmentally UNsound to DRIVE to the farmers market lol!
