I got a great deal on chicken breasts this week – $1.49 a pound!
I cooked all of it. Part for tonights dinner and then the rest split between our lunch tomorrow, which you’ll have to wait until tomorrow to see – Tony gets terragon chicken salad, I made a southwestern bake with the leftover spaghetti squash.
Once off the grill I used 1 ounce of mozzarella cheese and put them under the broiler
My plate:
- 4 ounce chicken
- 1 ounce mozzarella cheese
- 2/3 cup homemade pasta sauce
- 8 ounces of cooked spaghetti squash
And guess what I got in the mail today??
I’ll have to wait a while before I try some of these recipes!
Stats for the Day:
- 1119 calories (not enough?)
- 34 fat
- 118 protein
- 87 carbs
- 13.3 fiber
Off to clean up the kitchen – see you at breakfast for ham, spinach, egg and cheese cups!

I absolutely love broilers when it comes to cheese. I think that melty cheese on anything just makes the meal 🙂
oh thank you thank you thank you, I have been trying to think of something else to make with speghetti squash instead of just with meat sauce and so this is PERFECT!
1200 calories is the standard minimum calorie intake that is suggested, and that’s really bare minimum. I wouldn’t be comfortable ingesting anything less than that personally, but I’m also not you. You probably won’t notice much after one day, but I’d definitely keep an eye on it.
Wow I agree with the previous poster… that is VERY LITTLE calories. I used to strive for 1200 but would never be that low… I prob. always taken in at LEAST 1600. Are you hungry, or is that enough to satisfy you?
I actually wasn’t too hungry, which surprised me! What I think I need to do is figure out the calories ahead of time, so I can add to my meals to bulk it up – I typically eat around 1450-1500 calories a day.
That’s not a lot of calories. Were you starving??
