I basically used some of the leftovers for my lunch today – the base is 2 cups chopped romaine, then sprinkled over the top:
- 2 ounces taco meat
- 3 ounces chopped carrot
- 1 ounce pickled jalapenos
- 1 ounce Mexican cheese
- 1 ounce tortilla chips for dipping!
But then my co-worker reminded me that she brought me some light jalapeno ranch dressing and so a put some of that on each bite!
Now I am going to spend the rest of my lunch break reading your comments to my giveaway post – I caught a few earlier and you guys have some great ideas!
Tony is going to be picking up pork chops to grill – its too hot for pizza tonight! Hannah is working but luckily will be able to make our softball game tonight – our coach isn’t able to make it, so I will be in charge – I have to get my game face on!

I made taco salad for Nick last night, strange! I used crumbled up Sun Chips since we didn’t have any tortillas or taco shells. He loved it and even asked for more, yeah! Yours has more stuff on it though, I especially like the jalapenos…I eat them straight out of the jar, yum!
This looks heavenly! So gooey and yummy!
