I didn’t use any eggs with the cottage cheese, just mixed some crushed red pepper and Italian seasoning into the cheese.  First layer is the no bake noodles (4 on each layer – a total of 12 altogether), then I put some of the cottage cheese, some of the mozzarella, a layer of spinach, a layer of zucchini, and a sprinkle of cooked quinoa and kept layering until the last layer is the noodles, sauce and then the remaining mozzarella cheese.

I went to our cafe to get a side salad, but their vegetable salad had a lot of things I don’t like: artichokes, onions, black olives, etc.  I love caprese salad – I thought I would give sliced tomatoes another shot iin this salad:

The balsamic vinegar and fresh basil is amazing – so fresh!

All together lunch comes in at 455 calories, 19 fat, 21 protein, 46 carbs and 7.2 fiber.

My friend and I walked 2 miles at lunch in 90+ degrees!  It felt good though – we brought water which helped!
