It was so stormy last night I didn’t want to turn on the computer! Wave after wave of storms, but we were lucky that the tornados (or possible tornados) went north of us.
After it was over, Hannah and I took Ed on a quick walk.
But look at all the rain water pouring into the river!
Tomorrow marks the First Annual Father’s Day Fry Feast so I cleaned out the deep fat fryer – it was so easy! It looks brand new. But one interesting thing – I started with a gallon of oil, and between us, we’ve probably used the fryer a dozen times. Check out how much oil is left!
And yesterday was another great mail day for me!
This is one of the things I am going to make for me and Tony one night when Hannah has to work:
I’ve always shied away from making lobster rolls because all the recipes I’ve seen is loaded with mayo, which I don’t like. This version has a lemon vinaigrette – since its just me and Tony I think I will split one large lobster tail between us – lets just hope it fits into my $125 budget somehow!
Off to make breakfast and today is extreme clean day!! See you at lunch!

I stopped my subscriptions in an attempt to cut back, but now I find myself lured by the pretty glossy covers and still buy some of them at the newsstand. Cooking Light and Everyday Food are two regulars but Bon Appetit has been trying to squirm its way into my life too!

Wow, that’s cool about the oil! You always hear that if you keep it at the right temperature it’s fine and doesn’t go into the food – but SEEING it really drives that point home!
Oh wow, so you don’t have to use a lot of oil? Do you use the oil and then pour it back into the container?? that’s crazy! But good of course. The lobster rolls looks delicious, I can’t wait to see yours!
The instructions for our deep fryer suggest changing the oil after 12 to 15 fries. I kept the gallon container so I could throw the oil out. If you have the oil at the right temperature, it sears what you are frying and doesn’t allow the oil to seep into the food.
Of course, its still oil! 😀
lobster rolls without mayo sounds great!!!!! i have never been much of a mayo fan, but lemon vinaigrette sounds delicious
