I recently discovered cooking videos on about.com. I was going through my freezer and found two opened bags of shrimp. I googled shrimp recipes and found one for shrimp wonton soup. Great Ithought! I have everything for that! Turns out my wonton wrappers had molded, so I ended up cutting up my egg roll wrappers – worked perfectly!
Shrimp Wontons
- 12 ounces shrimp (that’s what I ended up having after peeling the frozen shrimp)
- handful fresh cilantro
- 1 tablespoon grated fresh ginger
- 1 tablespoon spicy stir fry sauce
Then boil – I gently put them in the water and swirled the water with a spoon so they wouldn’t stick to the bottom of the pot. You know when they are ready when they rise to the top – about 2 to 3 minutes.
The base of the soup is 8 cups chicken broth, 2 diced carrots, sliced peapods, bean sprouts, grated ginger and crushed red pepper flakes.
All together lunch comes in at 373 calories, 14 fat, 13 protein, 52 carbs and 7 fiber.
Quick questions – this week’s BSI challenge is “greens.” Do you think baby spinach is considered a green, or just things like kale and turnip greens?
And I am proud to say I walked for 45 minutes at lunch and it felt so good, but my calves really felt the hills today!!

Delicious! Wontons are a favorite at our house. I am not sure if any would make it to the soup though.

Your soup looks awesome. Some of my best memories with my grandmother as a child were of rolling won tons. I think she used a pork/shrimp mixture but I am not sure. Fresh cilantro is key though…yours look great!

Umm I think “technically” greens are from the tops of certain plants, whereas spinach is the plant itself so its not considered a green. But, if I were the host I’d let it slide since it’s leafy and green – maybe ask her if she’d accept spinach leaves?
