Mmmmmm.  I am still licking my lips from dinner!  When Tony was at the store, by our local grocery stores meat counter, they have proscuitto ends, and once he saw that, he knew he would base the pasta sauce around that.

This particular grocery store (if I have any regular readers)  also offers the $1 rack – Tony bought a bunch of red peppers!

So the base of the sauce is olive oil and garlic.  He then added two cans of roma tomatoes, and the chopped pepper, and because he loves me desperately, he then used the stick blender to make a smooth sauce.  He then flavored the sauce with Italian seasoning, salt and pepper, then added the chopped proscuitto at the end while it simmered.  The sauce was so rich and flavorful!

plenty of leftover sauce to make my quinoa lasagna again!

Then on the grill he did Italian sausage that I diced up after it was cooked:

The pasta he chose tonight:

It took exactly 12 minutes for al dente:

this shape of pasta really hung on to the sauce - so good! :D

Thank you Tony – dinner was delicious!

So if any you have read the “The Second Person” page on the top of my blog before, you’ll know that Tony and I met on the internet.  In the beginning it was phone calls and emails before we met.   At the time we met I was at my all-time lowest weight as an adult – 137 pounds, down from 209 pounds the year before.  I do think its true that you won’t “attract” love until you love yourself!  In any event, Kashi products were my go to in my weight loss (before I was diabetic).  Kashi Good Friends was my staple, except I would add about 1/2 cup Lucky Charms to each bowl with soy milk to kick it up a notch! 😀

Tony, being the ever dutiful new boyfriend, was on a mission to find Kashi products to have at his house when I visited.  Exactly 9 years ago today, this is the e-mail attachment he sent me:

I love my husband!
I love my husband!

If you ask me, it was love at first sight.  I actually remember every detail of the first night we met.  As soon as I saw him, I knew he was for me and that we would get married – and we did just six months later!   I was myself from the second I met him, I didn’t have to pretend to be something I thought he wanted – it was pure comfort from day one.  And the best part is that after nine years I still can’t wait to come home to him!

Off to snuggle with my main squeeze – see you tomorrow!
