We ate lunch so late that we I wasn’t that hungry for dinner, so we scaled it down – no steak – we’ll have that tomorrow.  We ended up not going to the movie – we had the wrong time for the wrong movie theater!  But that’s okay, we ended up going to The Fresh Market and I ended up getting really good scallops – I ended up wrapping Tony’s in bacon with just a quick salt and pepper for seasoning – I decided to use my herbed goat cheese on my four scallops – SO GOOD!

I was afraid I would lose my goat cheese if it melted too much, so I used my pan that I use in my toaster oven – just covered it in aluminum foil.

I used the Harmony grain blend from Trader Joe’s, mixed with 1 small zucchini as our side dish.  Hannah was in charge of the garlic bread – it was actually garlic bread, i.e. it had slivers of garlic in it, and she added a touch of butter and garlic salt in the toaster oven – a perfect light meal!

I love all the combinations of grains in this – couscous, red quinoa – and the fact that I made it in my rice maker and it came out perfect – this one is a keeper!
