When I decided April 1st to do the 30 day shred challenge, I stuck with it – all 30 days. I lost 5 pounds and 5 inches!
My May goals were less concrete, and therefore, I know I didn’t challenge myself as much as I should have – on June 1st I’ll have my next weigh in and measurement.
Now comes the Fabulous Fatties who have a two week challenge starting tomorrow and I signed up!
You get points for doing things for a healthy life, i.e., eating your 5 servings of fruits and veggies, drinking 8 glasses of water a day – and even points for a random good deed! But the one I am most interested in is earning 1 point for 1 minute of exercising!
If I get my a$$ out of bed in the morning, I could easily go to the gym for 45 minutes – do my usual 30 – 45 minutes at lunch with my co-worker, and then walk the dog at night, I could rack up some serious points!
And its doable – only two weeks! I’ll keep you posted.
On to dinner! I am not a fish person. I wish I was, but I am not. Now I have learned to like ahi tuna (I’ve gotten over the “raw” look), I’ve tried tilapia but it has this funny after taste – not for me!
This brings me to barramundi – an Australian white fish that is being marketed in the U.S. as the “non-fishy” white fish. I first had it and posted it here – way back when I didn’t really know how to use my old camera! 😀 This doesn’t taste like fish at all – in fact, Hannah thought they were chicken nuggets!
I decided to use the onion ring beer batter for this shrimp – simply because its so light. The only thing I did differently was add some taco seasoning to the dry mix:
The secret to frying in oil is frying at the right temperature – you have to have it high enough to sear the outside so that the oil doesn’t soak into what you are frying. So in frying up one pound of fish, this is how much oil was leftover:
And I finally stocked up on my pickled jalapenos – I’ve been out for the longest time!
I got these stand and stack taco shells – each one is only 65 calories! My first one had one slice of avacodo on the bottom, 2 pieces of fish, pickled jalapenos and shredded lettuce – and Tabasco!
My second taco was a low carb flour tortilla – 110 calories and 11 grams of fiber!! I added a dollop of fat free sour cream on this one.
I have no idea how many calories exactly, too hard to figure out – lets say 500? Would you agree?
We are watching the Spelling Bee finals – love it! Although it makes me feel pretty dumb because I haven’t heard of one word yet!

This reminded me of the old Loretta Lynn/Crisco commercials – when she would fry chicken and then pour the oil back into the measuring cup!

That fish looks so good! I’m such a scaredy cat about frying though. Did you use a deep fryer?
Sadly, we don’t have a deep fryer (but that may be rectified in the near future after my last foodbuzz payment!). Just a big skillet with 1 1/2 inch sides.

Wow and a half!!!! I’ve never wanted to be invited for dinner at your house MORE. This is the yummiest meal I’ve seen in awhile, and that’s saying a lot since 75% of my internet activity is reading food blogs! 🙂
Thanks Christina! And I got the fish at Dominick’s of all places! Kind of pricey – $10 a pound, but when you consider its for a dinner at home, its not too bad!
No it’s not at all. If we went out to eat, it’d be $15 for one piece of fish!
I didn’t know you could get barramundi in north america – I had it a few times when living in Australia, and it was really good.
I’ll have to check it out. (And those fish tacos look FANTASTIC!!!) Monterey Bay Aquarium’s “Seafood Watch” gives the U.S. farmed variety of barramundi a green light (http://www.montereybayaquarium.org/cr/SeafoodWatch/web/sfw_factsheet.aspx?fid=211).
Tilapia is popular here, but my husband doesn’t care much for it either.
