So my friend Renee and I (whom I shared this with!) had to decide whether we wanted to make this two servings for 450 calories, or four servings – we opted for the smaller serving and had a mixed salad on the side.
We ended up doing Level 1 at lunch – its only been a week since we did it last and boy was it hard! We were sweating bullets by the end!

Without the pasta, this would be a GLUTEN FREE dish. Be careful to either suggest without the pasta or to mark this as a dish that is not celiac friendly. Lovely photos!
What a great idea for lasagna! I love quinoa. Have you ever tried red quinoa? I bet that would make it look really interesting.
