I stopped by the grocery store that’s on my way home from work – their 50% meat mark down section was empty! On to Plan B – I started looking around, and the meat prices were awful! I ended up finding this, at $7.04:
A 4 ounce serving comes in at 170 calories, 8 fat, 1 carb, 0 fiber and 21 grams of protein – it was so tender! I actually have about 1/3 of it leftover and plan on making steak and eggs for breakfast, so for $7, I got one dinner and a breakfast – not too bad!
I already had zucchini and potatos at home, so those were my side dishes – I ended up not even adding any cheese to the zucchini pasta – just sauteed it in 1 tsp. extra virgin olive oil and cracked pepper and salt.
My plate: 4 ounces of steak, 2 tablespoons of beef gravy, 3/4 cup mashed potatoes, zucchini pasta, 1 slice of my homemade bread with a pat of butter:
So not too bad considering at 5:00 I had no idea what was going to be for dinner! Hopefully with these new magazines I got in the mail I’ll be able to figure out a menu for the rest of the week!
Right now I am cooking a spaghetti squash and I have quinoa in my rice maker – I am making a vegetable lasagna for lunch tomorrow – turns out no one else in my family will eat it!

That looks yum! How did you make your zuke pasta? Do you have a spiralier?
It’s a peeler that’s called a julienne peeler – you just peel and it puts it in strips like that – love it!
I really love the idea of zuchinni spagetti… now I know what I am having for dinner 🙂 Off to the grocery store!
Your dinner looks great! Love the idea of zucchini pasta 🙂
beautiful dinner! the zucchini spaghetti looks so cool!
Love quinoa and spaghetti squash! And mashed potatoes are pure bliss.
That potato ricer sounds very handy!
so jealous of your potato ricer, my mashed potatoes always have lumps!
