I had a few chicken tenders I needed to cook up from our kabob night the other day – chicken tacos it is!
- 2 corn tortillas
- 3 ounces chicken with taco seasoning
- 1 ounce pepper jack cheese
- baby carrots
- red peppers
- green peppers
- asparagus guacamole ****
I used Pam and about 1 tsp. smart balance oil to pan fry my tacos – love it when they are crispy!
**** Note that I’ve discovered that asparagus guacamole is best when fresh. This batch is a few days old and kind of has that “stinky” asparagus smell – I only had one bite and threw the rest away.
My friend and I walked for 45 minutes at lunch and actually broke a sweat! The path we take is kind of hilly, I can really feel it in my calves.

great lunch and good job with the walk! I had to run errands, so I couldn’t walk, but it is beautiful outside!
