When I was putting together my breakfast and lunch this morning, I saw that I still had a small container of pickled jalapenos, so I decided to make my version of huevos rancheros, which is simply adding pickled jalapenos to my cheesy eggs – so original, right??!! 😀
- 1 corn tortilla
- 1/2 cup egg whites
- 1 real egg
- .5 ounce cheddar cheese
- 6 ounces honeydew melon (which was SO good!)
I am usually horrible about picking up ripe canteloupe and honeydew melon, but this was firm and so sweet – tastes like summer!
Last night Hannah made this spinach dip – it was from a Tastefully Simple party, just mix with fat free sour cream. It was so good! Which I then proceeded to grab crackers that are only 3 crackers per serving at 110 calories, but did I portion them out before bringing them to the living room? That would be a no.
So I probably ate about 9 crackers and about 1/2 cup of dip – probably mindlessly eating close to 450 calories! We hardly ever snack after dinner, and if we do, its just microwave popcorn. Oh well, today is a new day!
I am actually not working out today because they are having a blood drive at my office today. I haven’t donated blood in probably 15 or 20 years!! But after everything Tony has been through, all his blood transfusions, I would feel guilty if I didn’t donate when its right outside my office!
Just wondering though, do you think I can give blood if I am an insulin dependent diabetic?Â
Morning break is over – see you after the blood drive! 😀
I’m HORRIBLE at picking good melons, too! I just picked out the grossed watermelon of all time.
You know it’s okay. Sometimes if you let yourself just have you feel better than depriving. it’s okay sometimes and once in a while will not hurt your diet.
I love pickled jalapenos!
Good luck with the blood drive!! I never could give blood but I loved volunteering at those things, passing out cookies and juice 🙂
great breakfast!
i’m not sure about the giving blood question – definitely ask the nurse when you get there!
biz! you should ask the nurse to see if you can give blood; how very sweet of you that you want to!
Biz, since I just ran the blood drive at my office a few weeks ago, the answer is yes.
The answer would be no if you weren’t taking care of yourself and your blood sugars would out of whack!
