I am certain that if Tony were home tonight, a phone call would be made to our local pizza joint! When I talked to him right after dinner, I believe he threw up in his mouth a bit when I told him what was on the menu!
So there really aren’t any exact recipes for dinner – just kind of made it up as we were going along. Hannah, my sous-chef de cuisine, chopped the veggies while I made the miso soup. I used 2 cups chicken broth, 1.5 ounce finely chopped carrot, 2 tablespoons miso paste, and 5.5 ounce chinese noodles already cooked. Once the soup was done I added the noodles and took it off the heat.
I marinated my tofu for 1/2 hour before I grilled it. A combination of 1 tablespoon stir fry sauce, 1 teaspoon sweet and sour, 1/2 teaspoon soy sauce, fresh minced garlic and grated ginger.
My whole dinner comes in at 570 calories, 14.3 cat and 78 carbs.
While we ate dinner Hannah and I watched a movie I’ve been wanting to see Run Fatboy Run. I really liked it, but the message is awesome – never give up! Life is hard. Obstacles are always going to be in your way. It’s how you deal with those obstacles to get around them that make all the difference. Hannah rented this movie from the library, so I am sure its readily available and I highly recommend it.
I miss Tony. I am always afraid to call because I fear that the second I do, he will have just fallen asleep! He sounds so tired, and I just want to be there to wrap him in my arms and tell him everything is going to be okay. I am happy that his son came to visit and bring him chapstick (that I forgot to pack!) and ear plugs so hopefully he doesn’t have to hear every sound around him and he can finally get some rest. that move sounds really good – did it just come out? Thats the biggest thing I’ve learned this past year and a half is that life is what we make out of it. I was fat for so long and with just a mental adjustment, things have changed more then I ever thought possible!
