I am in heaven:
I think what makes me so happy about this salad is the dressing. So simple too! I used 4 tablespoons of hot salsa verde sauce and mixed it with 2 tablespoons of fat free ranch dressing – so 6 tablespoons of dressing (which is a lot!) comes in at just 40 calories!
- 2 cups romaine
- 1 cup red cabbage
- red pepper
- carrots
- cucumbers
- 1/2 ounce Mexican cheese
- 3 ounces cooked beef taco meat
- salsa verde dressing
- 1/2 ounce of crushed tortilla chips (for croutons! :D)
And it took forever to eat so I am excited! Didn’t work out today, I had to put Tony’s medical bills in order for our flex spending. We set aside $5,000 this year and we will have no problem reaching that amount!
And I talked to our insurance company and they told me I didn’t have to pay a $2,000 to a doctor because he was out of network because we didn’t have a choice at the time of Tony’s last surgery. I wrote them a nice “we aren’t paying” letter so we’ll see if that sticks!
And good news Tony’s room got moved so he is away from the construction noise and now has a view of Lake Michigan as opposed to another building!
I am spending the rest of my lunch paying a couple bills and cleaning up my dishes. Come back tonight for one 0f Hannah’s favorite thing for dinner: BREAKFAST! Not sure exactly what it is going to be, but I imagine hash browns will be in the mix somehow! See you tonight!
When I was eating vegan for a few weeks (that’s hard work!) I used to make salads like this w/ the Boca burgers and did the same thing – mixed salsa and ranch for the dressing! It’s SO good!

My fav salad dressing is so simple. Balsamic vinegar. I never tried it before I started this blog and reading blogs. It just goes to show you don’t need mayo.

Glad to hear things are going well with Tony and that you won’t have to pay! That’s definitely a rarity with an insurance company.
what a yummy filling lunch!!!! i love bfast for dinner but i always overdo it because i want ALL my bfast faves so my dinner ends up being eggs, pancakes, yogurt, fruit, granola, all that jazz 🙂
