Today is my nephew’s 13th birthday! I was trying to find a picture that I have of Hannah holding Paul. She’s 4, sucking her thumb, while she’s holding on to him! It’s really cute, but I could not find it! But I’ve always liked this picture!
Anyway, woke up with low blood sugar today, so food was my first thought. I cooked down the remainder of the corned beef to render out as much fat as possible. Then used the last left over baked potato that was in the fridge and put it together. Tony and I both agree that the texture isn’t quite right, but it’s still tasty!
- 1/2 Lender’s bagel
- 1 large egg (out of egg beaters already!)
- .5 ounce swiss cheese
- 1/2 cup corned beef hash
So I have no leftover corned beef for a Reuben at lunch today! But I do have oven roasted turkey, so a Rachel is on the menu for lunch! Time to get ready for work – see you at lunch!
