So Tony and I went back and forth with over fried chicken recipes, and we finally decided to go with a Kentucky Fried Chicken recipe.  The secret to that recipe was soaking the chicken in buttermilk.  So I bought some on the way home and we are going to marinate the chicken and have it tomorrow night.  Should be good!

So on to Plan B!  Have you ever watched Diners, Drive-Ins and Dives?   While I don’t think we have seen anything healthy on that show, there are just some things that we just have to recreate.  Tonights dinner was one of them!

Bacon Wrapped Meatloaf

  • 8 ounces ground beef
  • 8 ounces ground veal
  • 8 ounces ground pork
  • 1 egg
  • 1/4 cup seasoned bread crumbs
  • 7 pieces of bacon
  • salt
  • pepper
  • splash of Worcestershire sauce
  • 1 teaspoon Italian seasoning

Mix everything but the bacon together.  Lay the bacon slices side by side on a piece of parchment paper – use the parchment paper to wrap the meatloaf in bacon.

After 30 minutes I removed the parchment paper and cooked for an additional 30 minutes so that the bacon crisped up.

After the second 30 minutes - nice and crispy!  I made this into six servings.  Each serving is 367 calories, 25 fat, 7.1 carbs, .5 fiber and 24 grams of protein

  • 35.5 fat
  • 130 carbs
  • 16 fiber
  • 110 protein

25% calories from fat, 34 % of calories from protein and 41% calories from carbs.  No exercise today, but get this – I plan to get up early and go to the gym!  Well, that’s the plan anyway!!
