So since my doctor wanted me to stay home from work today, I had more time to put my breakfast together. I started out by Pam/oil frying (about 1 teaspoon oil) one serving of frozen hash browns. I cooked them just until the bottom got crispy. Then I poured in 1/2 cup egg whites, a couple tablespoons of diced red pepper, handful of spinach and 1/2 ounce Mexican cheese. I then put this in the oven at 350 for about 10 minutes, or until the cheese melts.
My breakfast came to: 357 calories, 13.2 fat, 39 carbs, 7.1 fiber (nice!) and 19 protein
So I feel about 50% better than yesterday. Still coughing but it doesn’t hurt as much, so that’s good! Off to get under my comforter and rest. See you later!

Mmm. That breakfast looks really good! I’m going to make some Southwest Turkey Burgers for the freezer tonight, and I think a frittata would be a great use for the leftover peppers. Does it still taste good leftover and reheated?

YUM! I love frittatas, but J isn’t a big breakfast eater. I usually sneak them in for dinner every couple of weeks, just so I can get my fix!
