Now that’s a mouth full! I made this last night and reheated it this morning when I got to work. It’s basically:
- 1/4 cup egg beaters
- 1/4 cup egg whites
- 5 spinach leaves, chopped
- 1/2 ounce volpi salami
- 1/2 ounce cheddar cheese
- two small corn tortillas (two for 100 calories)
I used a saute pan that was about the size of my tortillas. After it set on one side, I flipped it. Um, maybe I need work on that?
Then when that was done, I “Pam” fried it.
Then I cut it with a pizza cutter and had it with 1/2 grapefruit (with my new grapefruit knife – thanks MIL!)
So my whole breakfast was:
- 326 calories
- 11 fat
- 34 carbs
- 21 protein
- 4.4 fiber
Plan on doing a treadmill walk/run/incline – I’ll post it at lunch!
I like the sound of a breakfast quesadilla!
Flipping is difficult. I can’t make an omelet specifically because my flipping skills are non-existent.
This looks so tasty! I’ve got a whole pile of spinach that would love to be added to a dish like this.

great idea on the quesadilla! I have been making egg wraps lately too w/ egg beaters & a slice of cheese and an ounce of whatever meat I have. It’s a filling way to eat – they always fill me up!
I did AWESOME last night, the 1/2 bottle of wine is still there. Now I’m starting to make excuses though as to why I MUST go home and drink it. Doesn’t wine get old after a couple of days? Maybe it will expire before the weekend? hehe…I’m making excuses. I won’t drink it, I won’t drink it, I won’t drink it.

Looks really good. I wouldn’t have thought to make a quesadilla out of eggs. I think that I am going to have to try this!
