Roni at www.greenlitebites.com was the inspiration for this mornings breakfast. I almost always like savory breakfasts, but felt like something sweet this morning. I altered my recipe from hers by reducing the amount of cocoa, and adding 1/2 cup of oats (since I didn’t have whole wheat flour) and also added a tablespoon of peanut butter chips! And I didn’t have blueberries for her sauce but I definitely will try that next time!
Pancakes
- 1 overripe banana (mine was 3 ounces)
- 1/4 cup egg beaters
- 1/2 cup skim milk
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/8 cup unsweetened cocoa powder
- 3/4 cups flour
- 1 tablespoon peanut butter chips
- 1 packet splenda
Mix banana, egg and milk together, breaking up the banana into pieces. Sift together the flour, baking soda, baking powder and cocoa powder and add to wet mixture. Mix together until blended well – finish off with mixing in the peanut butter chips.
It ended up making 8 pancakes, so Hannah and I decided to split this into two servings. The stats are not bad! Really high in carbs for me, but I don’t do this very often – lots of insulin with breakfast today!

THIS WAS VERY FILLING! I finished this an hour ago and I am still full!
Tony doesn’t like kicked up pancakes, so he had a pear and a piece of sourdough toast.
