We are all set, turkey/ham in the oven and waiting for our guests, so I thought I would sneak in a quick post.
I made pecan pie for the first time, um, lots of sugar! but it looks amazing – I may sneak a sliver later – definitely insulin worthy!
I got the recipe off of www.pioneerwomancooks.com. I had to buy Karo syrup, I can’t remember the last time I had it in the house!
I cooked it for 50 minutes, and it was still quite jiggly so I was a bit worried, but as it cooled it set up nicely:
I made the best plain pancakes this morning – the secret was 2 tablespoons of baking powder and you let the batter sit for 10 minutes. Hannah said never to use another pancake recipe:
- 2 cups flour
- 1 3/4 cups milk
- 2 tablespoons baking powder
- 2 eggs, beat them separately before adding to mixture
- 1/4 cup butter, melted
- 3 tablespoons sugar
- 1 teaspoon salt
After breakfast Hannah and I took Ed for a 2 mile walk on the trail:
it’s beautiful outside today – up to 47 degrees!
Tony was in charge of making the stuffing – yes, that is sausage on the top! The smaller one has onions for those crazy family members who enjoy onions.
Here’s the turkey – we cook it at 450 degrees for 20 minutes to sear the skin, then reduce the temp to 350 for about another our or so – we have an 11 pound turkey and a 9 pound ham.
Plenty of snacks: cheese/sausage tray, dip and shrimp!
Okay, off to do some last minute things – I’ll post all the dishes after the guests leave!
