A M A Z I N G! I cannot believe how good these Reuben egg rolls are! Simple ingredients and the nutrition isn’t too bad either. Each egg roll comes in at 175 calories, 4.8 fat, 21 carbs, .75 fiber and 11 protein.
- 4.5 ounces swiss lorraine cheese, low fat
- 6 ounces lean corned beef
- 1 cup sauerkraut
- 2.5 tablespoons thousand island dressing
- 8 wonton wrappers
I sauteed the sauerkraut to remove as much moisture as possible:
I found this dressing at the dollar store – not too bad considering it isn’t reduced fat!
I divided all the ingredients into an assembly line:
Into each wrapper went .5 ounces cheese, .75 ounce corned beef, 1/2 teaspoon thousand island dressing and 1 tablespoon of sauerkraut.
After wrapping up all these delicious packages, I mixed 1 teaspoon of olive oil and evenly brushed the tops and then came back in with Pam and sprayed them all over.
Out of the oven . . . baked at 425 for 15 minutes.
I think it helped that I used my pizza pan with the holes in them because both the top and the bottom came out so crispy!
I served mine (I ended up eating two for lunch!) with jalapeno mustard as a dipping sauce:
I think the only way I would change this is to get caraway seeds to trick your mind about the missing rye bread, but still yum!

YUMM. looks delicious! i don’t think i’ve ever had saurkraut but have this feeling i would really like it.
They sell these at Summerfest up here every year, and they are really good. They always sell out too! But these look even better because they aren’t totally greaase covered! Thanks for the how to!
