Once again, in an attempt to trick Tony that tonight is not again Pizza Party Friday, I decided to make Mexican Pizza!
With the leftovers from the refried beans and taco meat, a delicious pizza was born!
The first layer? A mixture of 1/2 can fat free refried beans with a half can of enchilada sauce:
The rest of the ingredients – except no jalapenos for Tony! Although, as careful as I was, he got 1/2 of one slice on his side!
After the first two layers:
Here’s my side – I put the peppers on top so as Tony wouldn’t get any on his side – one may have jumped over though!
Now after you take it out of the oven, let it cool about 5 minutes. Then sprinkle with cold shredded lettuce – don’t dismiss this last step – IT MAKES THIS PIZZA!

DOUGH RECIPE:
2 1/2 cups flour (divided)
1 cup warm water (110 degrees)
1 package yeast
1 tablespoon olive oil
1 teaspoon salt
Put flour in food processor with salt. In a separate bowl, mix warm water and yeast. Let it sit for 5 minutes, or until the yeast is bubbly. Turn on processor and add water/yeast mixture.
Now add enough flour so that it doesn’t stick to the side of the food processor – for me its usually about an extra 1/2 cup, but you can eye ball it. Once it doesn’t stick, pour in the olive oil – this will give the dough a nice sheen.
It will be sticky – roll out using flour. This recipe makes two 14 inch pizzas.

I LOVE board games. Johnny won’t play Scrabble with me either, or Scattegories. He says thinking of words and letters isn’t fun for him, but really I think he’s jealous that I always win. *scoffs* .. Men!

Love your Mexican pizza and I know my husband would too. Friday night is pizza night at our house. We used to get take out and the hubby’s favorite was a Big Mac Pizza (spread with lettuce like yours) from our local pizza place.
Now (like everyone else) our budget has shrunk so I make homemade pizza every week. We’ll give yours a try.
