So I brought stuff to work to make stir fry, forgetting that I used up the last of my stir fry sauce last week. Nertz!
So I looked in the refrigerator, and there was some soy sauce – yes! And then I had chunky peanut butter in my cabinet next to the stove. I melted 1 tablespoon of peanut butter and stirred in about 1 teaspoon of sauce sauce and then added crushed red peppers.
I got back to my desk, took two bites, and had to come up with a better plan because it was still very bland. Aha! I had ramen noodles in my snack drawer! I took out the flavoring packet and used about 1/2 the packet in about 2 cups of water. Stirred in Tabasco and poured it over my stir fry.
It turned out really good! The Tabasco almost made it taste like hot and sour soup!
The first picture is the before, the second is the soup! Without the seasoning packet this was about 340 calories, not sure how much to add for the ramen flavor packet though. Not going to worry about it though – between my breakfast and lunch I’m only at 650 calories – saving room for taco fiesta tonight!

I love stirfrys! Ramen seasoning is great – I don’t usually use the whole packet when I made ramen so this is actually a great way to use up the rest…
