On the weekends, you would think that I would take Ed on longer walks, but life just gets in the way. I did take him on a quick 15 minute walk though – very windy!
We walked by the channel of the river near our house:
Then we walked all the way down by the river – beautiful sunset!
We ended up doing a dry rub on the beef:

So good – I made a quick fat free sour cream/prepared horseradish sauce for dipping. I loved it, but it was a bit much for Tony!
I made zucchini potato pancakes, but they didn’t turn out very good. They were flavorful, but didn’t have the crispness I was looking for, like a potato pancake.
Hope everyone had a good Saturday – I made a breakfast casserole/quiche to take to my mom’s tomorrow, I’ll post it tomorrow. See you then!
what an idyllic place you live. i am so impressed with that piece of meat! i have such a fear of cooking types of meats on the grill. this looks delicious!
Here’s the dry rub recipe! I store mine in a jar in the refrigerator.
1 tablespoon pepper (or 2 tsp cayenne pepper if you are more daring!)
1 tablespoon sugar
2 tablespoons chili powder
1 tablespoon garlic powder
1 tablespoon brown sugar
1 tablespoon ground oregano
4 tablespoons paprika
1 tablespoon celery salt
1 teaspoon cumin
1 teaspoon dry mustard
1 teaspoon salt
