We had a beautiful day, followed by a beautiful sunset!
Dinner tonight was beer can chicken again. I didn’t overcook it and have lots of leftovers to make something – not sure what yet!
I made skin on mashed potatoes and cheesy broccoli. While the potatoes were boiling, I used the steam to steam my broccoli:

I have no ideas how many calories specifically my dinner was, but considering we blended breakfast and lunch, I am not too concerned about it!
But I did make the dessert I mentioned before on Healthy Appetites on FoodNetwork.
Balsamic Strawberries with Ricotta Cream
- 1 cup part-skim ricotta cheese
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract (I used my Mexican vanilla – so good!)
- 3 tablespoons balsamic vinegar
- 16 ounces strawberries, hulled and quartered
Put the ricotta cheese, honey and vanilla extract into the small bowl of a food processor and process until smooth, 1 minute. Transfer to a small bowl and refrierate for at least 2 hours.
In a small saucepan combine the vinegar and sugar and bring to a boil. Simmer over medium heat for 2 minutes, stirring occasionally. Allow to cool completely.
In a medium bowl, toss the berries with the balsamic syrup. Divide the cream among 4 cocktail glasses, top with berry mixture and serve.
Per serving: 1/3 cup cream and 1/2 cup berries)

Planning on meeting my mom for lunch and a movie tomorrow. Okay, we are going to see the new Nicolas Sparks movie, Road to Rodanthe. It only got 1 1/2 stars. Does that deter you from seeing a movie??

I went to see Burn After Reading last night and it had good reviews, but I hated it! I’m so excited for Nights in Rodanthe though 🙂 The book was awesome.

How could it only get 1 1/2 stars?! It’s a Nicholas Sparks novel so you can’t go wrong there AND Richard Gere and Diane Lane – I didn’t think they were capable of giving a <2 star performance.
I’m still going to go see it. I loved the book (along with all other Sparks’ books) and I love Richard Gere.
Oh! And I was raised and lived on the Outer Banks for 18 years so a lot of filming was done in the local area of my hometown where the story was set. So gotta go see it to give a shout-out to my ‘hood.
