Okay, good think I can type fast because I have 10 minutes left of my lunch break. Before I get onto my “spaghetti stir-fry” I have to tell you a funny story.
So I went down to our fitness center, and I am usually the only one there. First one in gets to decide what’s on TV. So before going down, I see that Healthy Appetites is going to be on (check www.Foodnetwork.com for her balsamic strawberry ricotta cream dessert – it looked amazing!)
So imagine my disappointment that a man is on the treadmill, and he has it on a news station, and they have eight people talking about the bailout, what the stock exchange is going to do (I don’t understand most of it). So at one point, literally all 8 people were talking at once trying to get their two cents in. I look to the man and say “gosh, nobody is going to get their point across when they talk all over each other like that!”
No response. No big, maybe he’s not “chatty.” But that doesn’t deter me from continuing to make comments about what we are watching!
About 20 minutes later, he’s done, and I ask him if he’s coming back so I can change the channel. He can see me in the reflection of the wall of mirrors. That’s when he turned around, looked at me and pointed to his ears and shouted: I’M DEAF!
He left the room and I immediately started laughing – thank God he couldn’t hear me! And here I thought he was being rude (or maybe he didn’t like me??!!), when he just couldn’t HEAR ME!
Okay, on to lunch!
Spaghetti Stir-fry
- 4 ounces cooked low carb pasta
- 3 ounces marinara sauce
- 1.5 ounces of Italian sausage
- 4 ounces cooked shrimp, diced
- 1 cup fresh spinach
- 1 tablespoon reduced fat veggie cream cheese
- pinch of Italian seasonings
- pinch of Mrs. Dash spicy seasoning blend
I initially put all of this together in a saute pan, but after a few minutes, I thought it needed something else. Aha! Maybe I can add a tablespoon of cream cheese to make it creamy. Bagels are brought in routinely in my office and the cream cheese stays put in the community fridge until it expires. TURNED OUT WONDERFUL!

Haha! I liked your gym story! I worked at a college for a while, and they had a staff/faculty gym. I’d go after work and pray that there was a treadmill or elliptical with an empty TV- there was an older woman who would get there early and walk for over an hour at about 2 mph on a treadmill, and she would watch the History Channel no matter what was on! (Even the boring shows about airplanes and boats.) I hated having to take a machine next to her. Nothing makes 30 minutes on a treadmill go slower than watching a show about WWI biplanes…
