These Premier Protein Blueberry Scones are so good!
I’ve talked about my love of scones on this blog over the years. The first one that stole my heart was the one from Starbuck’s – the cinnamon chip one – swoon! Um, turns out it’s 21 smart points though – or basically the equivalent of two meals.
I wanted to try yet another version using Premier Protein (I still have so many to use up before they expire!) and pulled out a bananas and cream protein shake. I also used this generic Splenda as well.
You’ll only need one cup of the protein shake, but reserve the rest to brush over the top of the scones so the cinnamon sugar mixture sticks.
Normally I would make 16 scones to make them more point friendly, but once I put them in the recipe builder as 8 servings, I was thrilled when 8 scones was 4 smart points each!
Premier Protein Blueberry Scones
Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup Premier Protein bananas and cream shake reserve 2 tablespoons
- 1 tablespoon vinegar
- 1/2 cup Splenda, no calorie sugar
- 1 teaspoon vanilla
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1 cup blueberries
- 1 tablespoon cinnamon sugar
Instructions
- Heat oven to 425.Mix the vinegar and Premier protein together and let it sit for a few minutes, or until thickenend. In a large bowl, add the flour, baking powder, splenda and salt. Add the vinegar/premier protein mixture into the flour mixture, and add the vanilla, lemon zest, lemon juice and blueberries and mix until combined. The dough will be a bit sticky.Form into a circle, put the dough on parchment paper and freeze for 30 minutes. You'll be able to cut the scones into 8 pieces much easier this way. Brush the tops of the scones with the remaining protein shake, and sprinkle the cinnamon sugar mixture over the top. Bake for 14-16 minutes, or until they are browned.
I used one of the scones to make a mock Starbucks protein box – but pretty sure that they don’t have steak in their protein box. Breakfast came in at 9 points.
My sister was busy at work so I was solo on my walk. I bought a new purse that goes over my shoulders with a zipper so if someone tries to steal my phone, they are going to have to take me with them! I brought enchilada soup for lunch, and before I left for my walk I put it on the counter to help defrost before I got back. It was then that I realized that I froze this soup without the chicken – the first time I made it I added rotisserie chicken to it right before heating it up.
A couple blocks from my office has a big salad bar/hot bar, and I bought .25 pounds (about 4 ounces) of grilled chicken off the hot bar for $1.55 and chopped that up in my soup.
Lunch came in at 8 smart points.
I normally don’t check my email during work, but jumped on around 3 to make sure that the marketing director at The Chopping Block got my lastest blog post. I saw that my Mom had planned to go downtown last night with a friend to see the free Broadway show at Millenium Park, but her friend was sick and she asked if either Jenn and I wanted to go with her, because she still wanted to go, just not by herself.
If your 76 year old Momma asks to hang out with you – always say yes! She texted me that she had shrimp, hummus, cheese and fruit and an adult beverage. I went to Walgreens and picked up more adult beverage, crackers, deli ham and dark chocolate mini pretzels.
She tried Bandit pinot grigio and loved it. I love these cardboard boxed wines.
No big deal – just my Momma hanging out with her favorite child again.
Turns out a lot of other people had the same idea we did! I got there at 5:15 and the pavillion, both the seats and lawn area (seats 7,000) was already at capacity and they weren’t letting anyone else in. So we ate our little sninner (snack+dinner) and then made our way over the pavillion, and after a few minutes as people left, they would let more people in.
We had a pretty good view and the music was amazing. I definitely want to see The Color Purple and Waitress.
It was so much fun Momma! I got home around 10:00 and was in bed by 10:30. Jacob was telling me that he’s never been to musical before, so this fall we’ll have to take care of that.

Amazing Mother and daughter duo. You two look like you had a great time. You have so many great things to do in the city. The scones look really good and I can’t believe all the different things you have come up with using the Premier Protein.
Bandit Pinot Grigio has been my go-to wine this summer! It’s so good – and cheap!

I’m going to try these scones tomorrow. I don’t have the Premier Protein, but I have some protein powder that I’ll mix into a shake and use that. I just noticed–are you going to add some mixing/baking directions?
Also your chicken enchilada soup looks fabulous. I’m guessing you have that recipe somewhere–I’ll have to look that one up too. I’ve got some pre-cooked chicken in the freezer!
