I have to make this a super quick post – it’s really stormy this morning, and I probably shouldn’t even have the computer on – gah!
It was a bit chilly and overcast yesterday, but a nice quick 20 minute walk before work woke me up.
I made another batch of my overnight cottage cheese pancakes, except this time subbed in a whole chopped apple and 1 tsp. of cinnamon. Each pancake comes in at 99 calories, 2.1 fat, 14 carbs. .9 fiber and 6 grams of protein. I had Jennie-0 turkey sausage on the side – 3 links is 18 grams of protein!
I got my steps in at lunch, while watching Andrew Zimmer tour Boston, and I have to say Boston is quickly rising on my list of places to visit – all the food looks amazing!
My food was packed in my new Protein Challenge lunch bag – love it Karli! It came with some beef jerky which I’ll take a picture of when I eat it – it’s the perfect size for my breakfast and lunch food.
Lunch was a sirloin burger topped with Cabot cheese pepper jack cheese with hot giardiniera and roasted red pepper hummus, cukes and fruit on the side. This was so filling and delicious, not to mention a whopping 41 grams of protein!
I hit the gym again after work, doing another 2.5 miles while watching Food Network – the time just flied by!
So I think I told you that Hannah has a Pinterest board that says “stuff I want my Mom to make for me.” I have to tell you that it makes for an easy meal plan when I can just go to her Pinterest board! A couple of the things she pinned was these buffalo chicken quinoa lettuce wraps and . . . onion rings. Yep, I leave with not one, but TWO people who love onions!
I actually didn’t follow the onion ring recipe I saw, just tossed some whole wheat flour with half a beef UM, it was supposed to read beer! (that’s been sitting in the pantry for God knows how long!) and added salt and pepper. Yes, astute readers will realize that the deep fryer was brought upstairs. But just for this meal. Promise.
The dinner was so delicious! I was worried it was going to be too spicy for Hannah, but it wasn’t. I, or course, added more Frank’s hot sauce and a bit of ranch dressing on mine – messy to eat but the kids both gave this dinner two thumbs up. Well, and since the fryer WAS on the counter, I did throw in some frozen sweet potato fries on the side. It’s all about balance, right?!
So between my walk before work, walking around my office, lunch and after work walks, check out my steps!

Way to go on the weight loss and even happier for you sticking with the protein challenge too. I need some serious intervention. The “munchie” monster has possessed me and I need some assistance in ridding myself of him. I feel like I am ballooning up overnight. I think it is sweet you are cooking onion for Hannah. Her and Jacob are so lucky to have a personal chef.

I just saw the news about the tornado in Fairdale, Illinois. Is that near where you live? I remember you said you live about 55 miles from Chicago and the article said Fairdale is about 80 miles from Chicago. Anyway, I guess the thunderstorm you got was a strong one. I hope all is well.
Hey Katherine – we lucked out – Fairdale is an hour and 10 minutes due west of us, and the other heavy storms went north – we just got heavy rain, which in turn flooded part of my basement, but not too bad – that’s what happens when our ground is still slightly frozen from winter, but I need to have someone come out and look at my foundation and seal up the cracks – our house was built in 1922!
I love it when onion (rings) make an appearance on your blog! Seriously, that dinner looks delicious and I love the idea of doing a lettuce wrap with quinoa and buffalo chicken!
Well with two onion lovers in the house, I am sure they’ll make more appearances – Hannah said she wouldn’t mind having them for dinner every night, just on the side. 😀

My question is how does one make an overnight pancake with cottage cheese? Being a diabetic also I am interested in getting more protein in my meals.

Way to go! And for the record, Although I like onions, I’m not a huge fan of onion rings.
I ate a couple of these because they were skinny – not a fan of the big ones because there is a risk of the breading falling off and all you are left with is a huge chunk of onion!

Gasp! An onion in your house–one that you sliced and battered and deep fried? You are a really good mother!! We had hail at midnight. I thought someone was lobbing golf balls at the house. Didn’t last long as the storm rumbled off to the east. We are bracing for major rain/storms today.

The storms went East and North of us Bonnie, so we just had bad thunder storms – whew! Could have been much worse!
