Raise your hands if you are addicted to Pinterest! So much stuff on there its kind of ridiculous. I’ve had this pin of detox water pinned for a while. I mean what’s the point of having a pin if you don’t use it? (which reminds me I should meal plan off my recipe board!).
I made it the night before, and drank two large glasses before going to work. I had planned on bringing it to work, but I forgot it, but I drank more last night, and I am on my third glass of water and it isn’t even 7:30 in the morning yet. It is so light and refreshing, just a hint of mint. The star is actually the cucumber – I’ve never had cucumber water before but this is going to be my summer drinking water for sure. Have you ever had cucumber water before?
Breakfast was an egg white breakfast panini. 2 ounces of my bread, 1/2 cup of cooked egg whites, 1 ounce of deli roast beef, a slice of sharp cheddar and a handful of . . . cilantro. My office knives suck ass (need to buy a couple good ones to keep there), so the presentation isn’t the prettiest.
One of my co-workers is a cilantro fanatic. He told me that he makes english muffin egg sammies with cilantro, and I have to admit, cilantro and eggs go really well together! (Jenn, look away from the cilantro! – go check Jenn out – she’s lost 40 pounds and is on her way to becoming a certified personal trainer – totally inspiring!)
So I had my quarterly diabetes appointment yesterday. Ahem, well, I guess I somehow missed my January appointment because the last time I went was in September. According to their records, I was up 7 pounds since September. Granted a lot of that could be what I wore then vs. what I wore yesterday, but still.
It’s time to get my game face on people. My next appointment is in September, and my goal is to lose 20 pounds by then. It’s only 5 pounds a month. Maybe if I put down a couple glasses of wine and be more selective with my cheese eating habits, I’ll get there.
Louise and I are going to challenge each other this month. She rides her exercise bike. I plan on moving 100 miles this month, whether it be running, walking biking or swimming. Does anyone else want to jump on the challenge wagon?? Just leave me a comment of what your May goal is, and I’ll keep tabs on you throughout the month for support and cheerleading!
Let’s make it fun . . .for everyone who completes their goal, you’ll be put in a drawing for a case of my grilled fruit salsa! A mix of cherry, pineapple and my traditional baja fresh salsa – made to your heat level.
Lunch was leftover chicken fried rice, and on the side was three mini eggrolls. There is a Japanese grocery store next to my doctors office, so I stopped in for a few minutes. I’ll have to take a picture of the box, because the egg rolls were really good – just 10 minutes in the toaster oven and 3 were 98 calories!
I got home from work and Tony was enjoying a cigar. We sat outside chatting for a while when our neighbor came over to hang out. Out came the wine and we ended up sitting outside for an hour and a half! Pinot Grigio is our summer wine.
I didn’t start cooking dinner until nearly 7:30. It was quick and simple though – steak, corn on the cob and grilled zucchini. We enjoyed sitting on our front deck and grilled on the gas grill. So nice outside last night!
We left all our windows open last night and when I walked out of the bedroom I got instantly frozen – it is only 42 degrees this morning! But the sun is shining, I’ve got wonton quiches in the oven (recipe will be posted tomorrow) and I’ve got my game face on.

Considering how hot it has been here all weekend, that cucumber mint water is looking mighty good right about now. If I had a pitcher handy, I would definitely be making some!

Hi! I was wondering how often I shluod drink this smoothie? Should I replace 1 meal a day with it? I have a lot of weight to lose. I am going to start a regimen of soups, salads & smoothies you’ve posted:) My husband is going to do it with me. He’s great! I’m also going to make myself excersize 5 days a week, for at least an hour. Hopefully the weight melts off. Yum…I have a lot of Kumbucha (sp) bottles and I add cucumber to them and take them to work. I am known as the weird food person at work. I have to constantly explain what I am eating or drinking.
Your challenge sounds great, my only goal is to get this arm working right again:) I love cucumber in water, very refreshing, but I have discovered fresh sage leaves to be nice too, very different.

I want to drink a whole pitcher of that water! It sound so good. I’ve also had it pinned for a while, it’s about time I made it! Thanks for the push. I also need a challenge as I’ve gained a TON of weight. My goal for May is to exercise five days a week, every week, for at least 1/2 hour. That may sound lame, but that is a HUGE increase for me, who is lucky to get two walks a week. I want some grilled cherry salsa!

Yes to the challenge, I’ll do 100+ miles on my bike and a smoothie every day in May and maybe walk the dog around the block every day (she will like that). Have to get some of this poundage off by September when the reletives come for a visit. I would be happy with 10lbs. by September.
I shall have to try grilled zucchini this weekend…..looks good. Tonight roasted vegies in the oven and chicken legs in the Nu-wave. (makes the chicken crispy)

I wouldn’t try cutting out wine. Especially with summer coming up. Vicky has a great idea with cutting the wine and making it more of a spritzer. Have you tried any of the Skinnygirl wines or cocktails? I hear the wine is pretty tasty!

I have had cucumber water and it is great. Magic Hat actually came out with a cucumber hibiscus beer and it is…different 🙂 Cilantro is gross and evil.

I love Pinterest! You’re right, there is just so much on there. I’ve never seen the detox water before but it sounds delicious and refreshing.
I use quite a few recipes off of Pinterest and I’ve done about 3-4 craft ideas too. Love that place. I have never had the cucumber water but, I’m a huge water drinker anyways. In fact I get told to drink less water, can you believe that?!? Wth? This weather is awesomeness, it was 70 at 10 pm last night…I will take it 🙂
I tried Pinterest but didn’t really like it. I’ve also tried Facebook and Twitter, and no longer have those.
I have never found a wine I really like, but I’ll admit I do sometimes have one of the skinny margaritas. I might have them more often but I’ve learned the hard way that alcohol lowers my resolve to eat healthy and I kind of throw caution to the wind.
I agree Caron – the cheese and crackers go so well with wine, right?!

Cucumber water is awesome; there is a “swanky” bar in Omaha that serves it. My bf thinks it’s gross.

A case of your salsa is definitely good motivation to stick to my goals! My goals for May: do weight lifting 3 times a week, cardio every day that I’m not working a double, stick to my food “diet” goals aka don’t binge at night, wine/beer only on Friday/Saturdays, and be happy with my body! Good luck with your goals 🙂

Grilled zucchini is the best! 2 years ago I grew zucchini in my garden for the first time. It was huge and I had SO MUCH. LOL

I’m recently obsessed with grilling, do you just slice up your zucchini and put it on the grill or do you do anything to it first? How long does it need to grill? How do you do corn on the cob on the grill? it looks amazing!!!
I just tossed the sliced zucchini with about a tablespoon of Italian dressing and salt and pepper. It only takes about 3-4 minutes a side depending on how hot your grill is. For the corn, you just need to turn it ever two minutes so it cooks evenly – it takes about 8 minutes for the corn to grill.
Usually I’ll do the corn and zucchini together, move it to the cool side of the grill and then cook the meat. The sides stay warm but don’t overcook. 😀
The vitamin water sounds like a nice switch from the real stuff. And good luck with the challenge. You can do it!

Biz – try mixing your wine with sparkling water. Drink it in a wine glass and you’ll still feel like your celebrating with a glass of wine but it won’t be as many calories.

The ride to North Idaho yesterday was absolutely beautiful. Six hours of blue skies and sunshine made sitting in the car tolerable. Better, we’re supposed to have warmer days for the next few days Hooray for Sunshine!
I think I would like to join your May challenge. I can’t do much, but I will commit to walking at least an hour a week, so I’ll say 300 minutes of walking in May. It will be a push, but I am up for it.

I don’t drink alcohol…so I suppose this would be like someone telling me to stop drinking coffee, but have you thought about eliminating wine for a month? Just to get yourself more in check? I’m not big on elimination diets at all, but I think with things like alcohol, giving them up for a short period of time can really snap you back a bit! Those egg rolls look yummy. I’m shivering at the house of 42

Oh, I love cucumber water! The mint sounds like a great addition! When I had extra I used to freeze the mint in ice cubes to stick in water; tastes great that way too!
Hmmm I love Pinot Grigio, it tastes particularly well with white asparagus 🙂 My favorite summer wine is Chardonnay (in Winter I drink mostly Merlot).
I used to look a lot at Pinterest but if I visit it once a month now, it’s a lot.
I’ll be just a cheerleader on your challenge this month. I don’t do well on challenges but I plan to move more than last month.

Cucumber water is really good. I had some for the first time when I went to a spa and was surprised at how refreshing it is.
