I am loving the emails and comments on how everyone is liking my Inspirational Diet! I am three days in and I have to say its given me a renewed purpose. I was just going through the motions with WW. I am not saying I don’t like the program, because I do. But I just lost my mojo on it.
I can’t tell you the inspirational videos have stopped me in my tracks SEVERAL times a day. I was conscious of my after dinner sneaks of food, but I never realized how many licks and tastes were just on auto pilot. Yesterday I needed to give our dog some aspirin (for his arthritis) and I usually stick them on a piece of cheese – I made one for him and unconsciously reached for a piece of cheese for myself! I stopped myself though. ๐
I am trying to shake up my carb intake a bit – maybe have it a bit higher one day and the next day a bit lower. Those of you keeping tabs on Tuesday I had 212 grams of carbs, yesterday I only had 116.
My breakfast parfaits, while delicious, are around 60-70 grams of carbs, so I can’t do those every day. I decided to try something different for breakfast.
Roast Beef Breakfast Burritos
(one serving: 328 calories, 23 fat, 8 carbs, 3.6 fiber and 22 protein)
1.5 ounces of deli roast beef (for me it was three slices)
2 eggs, beaten
1/4 cup green peppers
1/2 ounce shredded cheddar cheese
1/4 avocado, whipped with a fork
salt and pepper
cilantro
hot sauce
Scramble eggs with green peppers. To assemble, lay each slice of roast beef on a cutting board. Divide the egg mixture between the three meats, then roll up like an burrito. Top with the cheese. Nuke for 30 seconds. Top with the avocado, hot sauce and cilantro.
While these donโt look that appetizing, holy yum, this was delicious. Thanks to my co-worker J for bringing me avocados, it totally made the breakfast. Well, that and the hot sauce. ๐
I went to check my blood sugar before my bike ride. Rats. It was 126. Perfect, but not enough for a strong workout. Walking doesn’t make my blood sugar drop, so I reached into my desk drawer to see what I had to boost my walk. I had totally forgotten I bought these, and even still forgot that Tony had mentioned these to me. They are Gatorade energy bites. I ended up eating 3 bites, for 150 calories and 18 grams of carbs. They were tasty too!
So in keeping with yesterday’s inspirational video – I went on a 50 minute walk – using my arms and legs!
The weather was perfect – low 60’s, no wind. It makes you appreciate the fact that you can take a walk. And those Gatorade bites? Did the trick. I was walking at a pretty good pace and when I got back my blood sugar was 94. Nice.
I have Mara to thank for lunch. I followed her recipe to the T – and when I figured out the calories, this giant sandwich (using 4 oz. meat, 1 6″ pita, lettuce tomato and 1/2 tablepoon of tzatziki, comes in at 384 calories, 9.3 fat, 40 carbs, 2.5 fiber and 34 protein. Except I loves me some tzatziki sauce, so I added two more tablespoons for 40 extra calories. And I had half of a lavish bread, which turns out to be just about the same calories as a 6 inch pita.
Hannah went to Roosevelt yesterday to take her placement tests, drop off her immunization records and get her student I.D. I thought she’d have lunch down town but with the NATO summit so much was blocked off it wasn’t worth it. Now she waits to meet with her advisor after her placement tests are assessed to schedule her classes for the fall. Hannah is a “check it off the list” kind of Type A person (so not me!) so she’s super happy to get those things off her list.
I had some ground beef I needed to use up so I decided to make a low carb Reuben burger. And since I skipped the carbs on the bun, that meant I could have sweet potato fries! ๐ I have never bought these before, but I had a coupon and thought I would give them a shot. Not only do they have these spicy sweet potato fries, they have sweet potato tots! It was a toss up, but I went with the spicy fries.
My burger: 4 oz. ground beef (after cooking), 1/2 cup sauerkraut, 1 tablespoon fat free thousand island dressing (I decided to make a fancy schmear on the plate so I would get a taste on every bite with 1 slice of swiss cheese on the top. With my serving of fries, dinner comes in at 564 calories, 32 fat, 32 carbs, 5.3 fiber and 35 protein. And no, 1/2 a cup of sauerkraut on top of my burger isnโt too much.

What I did yesterday:
- 1531 calories, 74 fat, 116 carbs, 15 fiber and 100 protein
- 30 minute Classical Stretch (hips, anterior muscles and achilles heel – my heel feels fabulous – and for the record, since starting this program, I haven’t worn my orthotic inserts!)
- 50 minute walk at lunch
- drank 100 ounces of water (happy Jenn )
- no wine. except I drank bloody mary’s with extra Tabasco. Kidding!
What I didn’t do yesterday:
- I restocked my bosses snack drawer (that is actually kept in my area) and I didn’t eat a single thing (honey mustard pretzel nubs people!) even though she opened two bags already and I could have easily snuck some. Not that I’ve actually done that, but I am just sayin’.
- Nothing after dinner, well, except for an orange, but fruit doesnโt count (and my blood sugar was low)
And now we get to the Inspirational Diet daily inspiration. I promise, after the first few that you’ve probably seen, I do have some obscure ones you haven’t seen, but I love that this guy not only got the weight off, has kept it off and now has a Ben Does Life tour going on. First, I want to say I love your blog! I’ve been reading for a while now, first comment though. I REALLY love these inspirational videos, I get excited to see them each day. I’ve also made better choices because of them. I am signing back up for my yoga classes and starting soon I want to do couch to 5K!

Those Alexia fries are pretty good. We had the same coupon LOL! I print mine out online, too. John liked them pretty well.
Today I went to the gym and I am going to go to a greenhouse and spend some of my paycheck on flowers for my hanging baskets and pots!
Oh, wow that’s an awesome idea to have the roast beef be the “wrap” for the burrito! I love it!
Today I’m going to take my dog for a walk. I’ve hit a plateau for the past week and it’s bumming me out. Instead of reverting back to old ways, I figure I’ll push through it and add that extra bit of exercise to see if it helps! I’m also getting my bike fixed this weekend so I can take advantage of riding around our low-traffic neighborhood!!
I’m going to help my daughter move! That counts right? It’s a part of college life!
I have some extra shredded beef in the frig that I totally have to turn into a breakfast burrito tomorrow! I’ve never had the SPICY sweet potato fries, they sound really, reallygood! Sadly, I’m the only sweet potato fry fan here. ๐
Those burritos actually look really good to me and I would eat them with roast beef, turkey, or ham! I love the spicy Alexia fries. Actually I like all the versions of fries that Alexia puts out – not to mention that their ingredients are whole!
Late to reading your post, because I was up and out “doing” early – I ran three miles(!!) with my friend Jenny, then I went to the grocery store and bought all kinds of healthy things – I’m going to actually cook (I know!!!) – gazpacho is on the menu.
I think the burrito looks good, but I love messy food ;)!
I “did life” already today, before reading your blog post—1 hr 15 min walk in the woods with my dog (he probably covered 10X the distance running in and out of the trees–so fun to watch how dogs are so exuberant just having the freedom to run)!
Today, I am going grocery shopping. I have been “making do” with pantry and freezer items just to see how long I can go without shopping. Three weeks, by the way. But now, it’s time to get some more fresh produce in the house!
The breakast burrito sounds yummy and it’s something different. I used to have some big ole glasses but, really I threw away all those pictures I could find. I couldn’t stand them…lol!! Plus, my Mom was a loon and she cut my hair super short so I looked like a boy with huge pink glasses…ugh!! Video of Ben, very inspirational. Plucking weeds from my flower beds after work tonight…sounds easy but, you end up with a sore body…trust me!!

Funny, when you started your inspirational diet I thought if I should mention Ben to you. I discovered his blog a couple of months ago and am a reader since.
I tend to do better with a lower carb ( primarily carbs from refined sugars and grains) intake as well. It’s hard for me though….I loves me some carbs! haha I am a huge fan of Alexias garlic bread, but never much cared for their fries. maybe I would like these?
My daughter and I are polar opposites with the list thing too…except I’m the one who is anal about checking off the list and she is not. ๐ I have been going through all of these enrollment motions with my son for next year as well. He just finished his placement tests ( they were online ๐ ) and next thing on the list is making sure all his transcripts are sent…from post secondary and high school. Then comes making the payments! haha and he has to go for an overnight to schedule classes and for an orientation in June. One day at a time!
I’ve been playing with my carb intake a bit too! Oddly, I seem to do better with a slightly higher carb intake. I totally want to try those spicy fries. They sound and look delicious. I just took spin. Feeling fabulous. I have a hair appointment today and I couldn’t be more excited!
I rearranged my schedule for today because my favorite yoga instructor in the world (aka ginger) is subbing for another for tonight’s class – so I totally rescheduled therapy and seeing a friend (both can happen tomorrow) and I love your new inspiration diet! So cool
You go, Biz! Something I’m going to do today to “do life” is to play with my son. He reminds me every day that life is fun!
Even though I don’t want to at all. Because of you and the video I watched yesterday, I am going to get my but outside and go for a walk. I love walking. I do it 5-6 days a week. But this week, well you know its that TOM (tmi). But I’m going to just do it!!! Haha
Oh and on a side note. Been following your blog almost a year and I felt the same way with weight watchers..I did lose 30lbs last year from it. (gained 10lbs back) then started counting calories. Still counting something but just so darn tired of points..lol But I’ve lost that 10lbs plus another 7. Just keep trucking =)
