I was 1.4 pounds away from getting my 10%, or 17 pound loss. All the way to the meeting my mantra was “1.4, 1.4!” So I was a little bummed when I saw this:
I came home and Tony was like “how did you do?” When I told him ONLY -.6, he said the perfect thing. “You worked hard for that .6, and you keep losing each week and your pants are falling off, isn’t that telling you something?” THANKS TONY! And he’s right. Slow and steady wins the race – this is a lifestyle, not a diet so I am just gonna keep on going. š
I’ll get my 10% next week. š
My breakfast yesterday was so good. I had one blueberry pancake, which is 5 points. I sliced up an apple and put it in a plastic container with the lid almost completely attached, but just enough open to let the steam out. I nuked the apple for 2 minutes – perfect, slightly tender but still a bite to it – I added 1/2 tsp. of cinnamon sugar (which is by our coffee pot) and 1/4 cup of sugar free syrup for a delicious, filling 7 point breakfast.
Since I came in early to work the day before, I was able to take a longer lunch so I did my last chance workout – I biked 10 miles in 60 minutes! The weather was perfect – about 68 degrees, overcast, not windy. There were lots of puddles on the trail because of the rain, and I actually looked forward to riding through them – my pants and back of my shirt were covered in muddy water – I am so hard core. Ha! š
Needless to say I was hungry when I got back. More soba noodles! Except this time I added red cabbage and left out the peanuts, so this giant bowl is only 8 points plus.
Again, this took me about 30 minutes to eat – I love the spicy broth this sits in. š
I had no game plan for dinner, other than I knew I was going to grill some corn. As luck would have it, right before I left work I checked in on The Kitchen Witch and the title of her post was: The Best F*&#ing Corn Ever, and when I saw chipotle peppers, I was in! I changed it up slightly, I reduced the amount of sugar to 1 teaspoon instead of a tablespoon, and added more chipotle – I loves it spicy! I also didn’t puree the chipotles, I just used 1 teaspoon of the adobo sauce.
The Best F*&#ing Corn Butter
- 1/3 cup chicken broth
- 4 tablespoons butter
- 1 teaspoon sugar
- 1 teaspoon fresh lime zest
- 3/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 teaspoon chipotle adobo sauce
I just threw everything in a small pot and let it cook down. This makes 12 teaspoons of butter, and each teaspoon is 1 PointPlus. One teaspoon is plenty, especially when you have fresh delicious corn like we did – I loved the heat mixed with the lime zest and the sweet corn. Holy shizz – corn on the cob heaven. That’s my favorite corn – the mixed yellow and white. On the side I had garlic marinated petite beef tenderloin medallions with fresh green beans. And while it didn’t feel like summer outside, this dish tasted like summer!
I just let the melted spicy butter solidify and can’t wait to eat it again. š

For everyone who emailed me and left a comment yesterday, my friend shared her BLT dip with me – note her changes are in bold.
This layered dip is really delicious served with soft or crisp breadsticks.
Prep Time: 25 minutes
Total Time: 25 minutes
Ingredients:
- 8 oz. pkg. cream cheese, softened
- 1/2 cup mayonnaise ā I used a little less
- 1/4 cup grated Parmesan cheese
- 1 cup torn lettuce ā I shredded mine
- 8 slices bacon, cooked crisp and crumbled ā Used a bit more ā like me some bacon!!!
- 4 plum tomatoes, chopped ā I de-seeded mine and used 3 vine ripe
- 4 green onions, chopped ā Only used 2ish (because I know you donāt like onions!!)
- 1-1/2 cups shredded cheddar cheese
Preparation:
Combine cream cheese, mayonnaise, and Parmesan cheese in small bowl. Spread onto serving plate. Top with lettuce, cooked bacon, plum tomatoes, green onions, and cheddar cheese. Chill until serving. This is great served with crisp breadsticks for dipping, along with some chewy Italian bread slices.
** I made my cream cheese mixture the night before and assembled just before you arrived. I probably would have layered it differently so I would look prettier ā but I really enjoyed it also.

I just wanted to write a quick note and let you know that you inspire me every single day. As we were sitting around last night with the what do you want for dinner- what do you want- I don’t know. I thought of you and your planning and have made it a priority to start menu planning to avoid this conversation and be healthier- we both need to lose a significant amount of weight……thanks for the inspiration!!

I’m sure all of your readers will agree with Tony, too. I get frustrated when I’m losing slowly but I try to remind myself that losing slowly will make it easier for me to get to my goal and maintain it. I’ve done extreme deprivation and it never works. omg that corn butter looks amazing, so trying that tonight, think i will coat our steaks with it…yummmers, yep .6 is a loss, no gain, you get those great meals and losing, stop beating yourself up girl keep up the good work.. diabetics have a hard time with that insulin resistance to lose and you are losing so dont let that get you down..hell i wished i could eat your wonderful meals and still lose….so glad to see tony having his cigar that is a sign he is going well…..will always remember you and your post of fuck cancer, he did !!!!!!!!!!!!!!!!!!!!!!!!!!!
