Green Beans with Insane Sauce
This recipe for green beans with insane sauce is inspired and adapted from my friend Bobby’s website. You can check out his original version here. Since I don’t like mayo, this is my adapted version and makes me crave green beans! Because I made the swap from mayo to yogurt, it reduced the Weight Watchers points to just 2 points for this serving.
Ingredients needed
- hericot verts
- garlic
- plain yogurt
- lemon juice
- soy sauce
- sesame oil
- sriracha
- dijon mustard
- maple syrup
- salt and pepper
What are hericot verts?
Hericots verts are simply French green beans, but they’re a bit more delicate and refined that regular green beans you might be used to. They’re thinner, slightly longer, and more tender and have a subtle, slightly sweet flavor. Because they cook quickly and are a naturally crisp texture, they’re perfect for a quick saute or light charring. It makes it feel fancy without any extra effort.

Green Beans with Insane Sauce
My friend Bobby from FlavCity has a recipe on his website called Green Beans with Insane Sauce. As I struggle with eating veggies, I thought I would give it a go. Sadly, I don't like mayo, so this is my version of his recipe. My recipe is 2 WW points and 90 calories. The sauce is so good!
Ingredients
- 1 cup haricots verts*
- 2 teaspoons minced garlic
- 1 tablespoon plain yogurt
- 1/2 teaspoon lemon juice
- 1/2 teaspoon soy sauce
- 1/2 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon maple syrup
- Salt & pepper to taste
Instructions
Cook the green beans
Add the haricots verts to a skillet with 2 tablespoons of water. Cook over medium heat for about 5 minutes, stirring occasionally, until the water evaporates.
Char for texture
Once the water is gone, lightly spray the skillet with avocado oil spray. Continue cooking for another 5 minutes, stirring occasionally, until the green beans are crisp-tender with a bit of char.
Make the sauce
While the green beans cook, mix together the minced garlic, yogurt, lemon juice, soy sauce, sesame oil, sriracha, Dijon mustard, maple syrup, and a pinch of salt and pepper in a small bowl. Stir until smooth.
Finish and serve
Transfer the cooked green beans to a plate and spoon the sauce over the top. Toss lightly or leave it drizzled, serve immediately and enjoy!
*hericot verts are just thin green beans found in most grocery stores
Notes
This serving is 2 Weight Watchers points. If you count calories or macros, each serving is 90 calories, 3 fat, 14 carbs, 4 fiber and 3 protein.
Why I didn’t grow up eating many vegetables
I didn’t grow up eating cooked vegetables at all, and I honestly thought it was because I just didn’t like them. It wasn’t until I was an adult, going out to nicer restaurants with my husband (like Smith & Wolensky) where vegetables were served a la carte, that I even tried them. And I was shocked!
The broccoli and asparagus came out this beautiful vibrant green, still with a bit of a bite to them, and I remember asking my late husband if they were raw! Turns out, every vegetable I had growing up was simply overcooked. Once I realized what properly cooked vegetables tasted like, everything changed. And in recipes like this? The fact that it makes me actually want to eat green beans is a win for me.
